    So glad I found this thread - I'm another one who followed the recipe exactly and finds the jam quite vinegary, or at least sour. I'm not sure if this is just how it's supposed to taste (it's def not sweet) or it's gone wrong. It set beautifully for me.

    Will be making this tomorrow for Christmas gifts. Fingers crossed it turns out okay ;)

    Do you transfer the cold jam mixture to cold sterilised jars, or spoon the cold mixture into warm jam jars? Just wondering if the seal on the jam jars will pop down if everything is cold?

    Just a little addition for those wanting to make their own Chilli Jam, but not actually getting around to it...

    Morrisons have a chilli jam which is their own brand, and costs about £1.60. However, it's more sweet than spicy so wouldn't really recommend.

    My absolute all time favourite, is Tracklements, but that's only really available in selected shops and online. Around £4 per jar.

    Though, if anyone lives in the North West, there's a local company called 'Heritage Kitchen' and their's is just FAB! Nice, sweet, spicy, and with just the right kick. Very yummy, and about £3.25 a jar.

    I've just made the chilli jam. I had to reboil it as it didn't quite reach the right consistency the first time (it's cooling down again now). I tried it whilst it was on a boil & it was very spicy :eek: Will it mellow once it's cooled down, set, & by Christmas, or is it likely to blow my nan's head off? :D

    Note to self: Wear plastic gloves next time you're chopping chillies

    Doesnt really taste right when boiling or cooling. Takes it to set to get proper idea. Remember you wont be eating it with a spoon (at least I dont :eek:) but smearing on breads./crackers.

    And Re Gloves - I really need to do this too - last time even touch face tingled. Rubbed oil into hands this time before chopping and it has def made a difference - though would be scared to touch eyes etc.

    Ooh, I have never made any type of preserve before but this was so easy! My pan looks trashed but we'll see. I didn't have as many chillis but I scaled down the other ingredients and made two big jars. It's pretty firey! But it's set nice and looks great!

    And thanks to this thread I used rubber gloves and just snipped straight into the blender with scissors. I did need to add a touch on the vinegar though as I don't have a processor, only a jug blender.

    Doesn't seem to have upset it! My step dad is going to love it. Really enjoyed making it too!

    Bossymoo - I usually do the same - blends much better with a bit of the vinegar to carry it - makes it much easier to get out of blending jug too!!

    I took a jar to a friends today who did us all gammon for lunch, it was lush with the meat and all the adults had a good spoonful! They were amazed and thought I'd just bought a chutney and added chillis to it lol. So when I told them how to make it I then got 2 requests for jars for "next time" :D
