  • Almost ready to make some of Nigella's Chilli Jam but I have a (random) question for you lovely experienced jam makers.....how runny is it?

    I ask because I'd like to layer the jam (Nigella's with green chilli/pepper on the bottom, then AWT's chilli apple kelly, then Nigella's with red chilli/peppers on top). I was thinking if I can time everything perfectly and leave around 15 mins between layering it should set enough whilst remaining mostly sterile?

    I was going to try pouring off the back of a spoon like you do for certain cocktails to make sure the layers don't mix, but if one's runnier than another it might go horribly wrong and that's an awful waste of three different jams!

    I've made them both and used Jam sugar for both so they set quite quickly, Nigella's is supposed to be left a bit before putting in jars and mixed anyway. I'd be fascinated to hear your results :)

  • I absolutely LOVE chilli jam! My mum's made it, I've bought if from Farmer's Markets etc, but my absolutely favourite is Tracklements.

    Has anyone else had Tracklements Chilli Jam? Do they know if it's similar to Nigella's, or AWT, or Jamie Oliver's?

    If it was I'd make bath tubs full!!! :)

  • I made this around a month ago - it made 6 250ml jars from the standard Nigella recipe. I'm a chilli-head so I didn't use any red pepper, just a mix of Habanero, Cayenne, Cheyenne, Apache, Fresno and 3 Bhut Jolokia peppers. They're all home grown so it's extremely cheap to make.

    My father in law tried some and it gave him chilli hiccups straight away - it's definitely got the perfect chilli kick. I plan to marinade chicken with it or just have it on bacon sandwiches :)

    I made Jamies cheeky chilli jchutney last night, a very expensive exercise, a lot of ingrdients made 3 small jars and it literally blows your head off... that'll teach me to try something new!! :)

    Lindylou do you have any good recipes you can share?

    I'm going to make some more nigella tonight :)

    be my guest I think it will be used to flavour things here rather than eat on it's own - may give a jar to the mil though :)

    I made nigellas sweet chilli jam last night, perfect results and 8 jars of jam - yum!!

    I have 3 left I'm going to make, caramelised onion marmalade, tomato and chilli chutney and raspberry ripple jam! have to make them all by the end of the weekend though as having a new kitchen put in, starting next week!

    I am going to make this at the weekend. It will be the first time I have made anything like this so I have a few questions for all you people that have made it a few times!

    1 - I dont have a dishwasher so I am going to use a method of sterilising in the microwave - anyone done this?
    2 - It says dont stir when dissolving the sugar in the vinegar - at what point can I stir? After I put the chillis in? Or right at the end?
    3 - Should this be stored in the cupboard or the fridge?

    1 - I dont have a dishwasher so I am going to use a method of sterilising in the microwave - anyone done this? yes, works fine just fill the jar with water and pour it out whats left in the bottom will be enough moisture then put in the microwave. With the lids put them on a plate and pour over boiling water

    put the vinegar and sugar in i give it a quick stir to make the sugar go under the vinegar and them leave till it looks like the sugar has dissolved - not long - if you stick a spoon in to have a look it shouldn't be grainy - it wont ruin it - promise :) then add your chilli's
    3 - Should this be stored in the cupboard or the fridge?
    if in sterilised jars the cupboard until opened and then the firdge
