Made this and the chilli jam last night - and enjoyed immensely with a cheeseboard!!!
Only thing is this one for red onion marmalade - even after reducing right down the liquid was still quite thin - used caster sugar - next time should I use jam sugar or would that make it too think ?? - what does preserving sugar do ?

It would need reducing further then, if the liquid was still thin. Preserving jam has pectin in so it sets - but as you don't boil the marmalade and it's not supposed to be jelly-like [or jam-like] I personally wouldn't use it.If you haven't got it - please don't flaunt it. TIA.0

To sterliise jars; give them a hot wash with normal washing up liquid - and put wet into an oven at 105-120C...or equivalent. Just above boiling. Leave until dry.
Do the same with the lids but only put them in the oven for a couple of mins to clear the surface or the plasticy bit will melt or turn brown. Keep in a tray to stop them sliding all over the place.
I leave the jars in the oven and just turn it off so that they are still hot when I jar up the hot jam/jelly/whatever. Then lid them and leave to cool.If you haven't got it - please don't flaunt it. TIA.0 -

This is the first year I've made this, and it came out really well -made it with green chillies and peppers but still looks lovely. Its now on my list to make every year. :T"A" is for Opple if yowm spaking loike a yamyam!0

Made it yesterday and I'm really pleased with it. It came out quite jelly-like, which is what Nigella says it should look like and looks fab in the jars with the flecks of chilli and red pepper. Definitely one to go in some Christmas hampers.0
