  • It's yummy, but does come out more like a sauce than a jam - at least mine did. However, I do really like it, and it is possible to do a small batch to test first.

    Glad it's not just me. I've just found this thread - my massive pan of chilli jam is just cooling down a bit before I can jar it - half the jars didn't seal last time so I've reboiled and am going to jar when still warm so it can do the vacume suction thingamy as it cools. With any luck it will set this time, if not I will just have to tell everyone it is chilli sauce instead :rotfl:.

    Right all ingredients ordered for Mr Tesco to bring. I have never made jam before - is this recipe foolproof?? - 150g of red peppers- approx how many would this be ??
    Ladybirdintheuk - you say half the jars didnt do the vacume suction - what is this -do I just replace original lids while jam is still warm ?

    Any advice would be really welcome - big fan of chilli - also love red onion relish out of M&S - if anyone has a easy recipe ?? - might as well go the full hog :)

  • One red pepper will do it; I don't even use that as I grow my own chilis and just pop some red ones in there.

    Red onion marmalade - this recipe rocks - we cleared a jar given to us in a week. :D

  • I made this last year and it is gorgeous! Do make sure that you use the Jam Sugar (which contains pectin) not just Preserving Sugar (which doesn't) or it won't "set".
    Gave jars to the sons-in-law as part of a Christmas "hamper" and have been told that it is wonderful used as a dipping sauce with spring rolls/thai crab cakes/etc etc. Have used it myself to jazz up sandwiches (everything from cheese to cold meats) and served it with left-over cold chicken/beef/pork on Mondays.

    There is also a version in the River Cottage Preserves handbook, which includes some root ginger. I've done this one too and it is also extremely nice.

    Will be making more this year - everyone is getting home made presents for Christmas!

    That's it. Air contracts as it cools, so if you are reusing old jars the "don't use if the lid pops when you press it" bit on the lid contracts so it is properly sealed again.

    That is what I do with chuntey anyway.

    Having said that, half of my jars haven't sealed again - I think the lesson from this is not to reuse baby food jars, as it is those that haven't worked. I'm just going to have to eat them up instead :j.
