Weezl's nut roast recipe

Hi just wondering if anyone in MSE land can help me with the recipe for Weezl's nut roast please. Was going to give it a shot but for some reason I just get a blank page for the recipe on her site. The other recipes seem to be working fine for me - just not the one i want to try :(

    The ordinary nut roast or the yule nut roast (the cranberry and cashew version) ?
  • Hi Weezl has two nut roast recipes at the moment, one which is on the christmas planner which is being tested at the moment http://www.cheap-family-recipes.org.uk/recipe-cranberrynutroast.html and the normal on...which I can see is playing up at the mo. I'll let you look at that and get back to you with the ingredients of the other one in a min. Hope thats okxxxxx

    For the nut roast

    Oven: Pre-heat to gas mark 5

    Tablespoon of oil for frying
    4 small onions, chopped (320g)
    2 teaspoons garlic
    50g SR flour
    200 ml vegetable stock (or water)
    200 g finely chopped peanuts
    50g chopped walnuts
    400g tin of kidney beans
    175 g breadcrumbs
    100ml liquid from a jar of sweet red peppers if you have one, or a splash of wine vinegar/balsamic vinegar if not
    dessertspoon dried oregano
    Salt and pepper to taste

    For the bubble and squeak

    320g carrots
    800g potato

    Method

    nut roast

    Stew the onion in the oil for about five minutes or until soft. Add the garlic. Cook for a few more minutes. Sprinkle the flour on top. Stir well. Add the stock or water, stirring all the time. Bring the mixture to the boil, and simmer slowly for two or three minutes. Lightly crush the kidney beans so that about half of them are crushed or halved, and add these to your mix. Stir in the nuts, breadcrumbs, herbs and seasoning. Spoon the mix into a 2lb loaf tin, greased. Bake for 25 mins


    Bubble and squeak

    Cut potato and carrot into inch cubes and boil for 15-20 mins until tender, don’t peel the potato, just wash it. Drain and mash coarsely (bits of carrot still visible). Shape into burger shaped patties about 2 cm thick, and fry in a non-stick pan until the top and bottoms are crispy.

    Ah ok it was the ordinary one I meant (forgot she had the christmas menu - must go check it out). Quite glad its playing up for others aswell was thinking it was either me or my computer!!

  • I would like to butt in and say that I have tried a few recipes off of weezl's site and the nut roast was lovely, it was also nice cold with a buffet lunch as well and the last if it is in my freezer! Thanks so much weezl for your hard work I have written down loads of the recipes. I have had success with everything I tried. The pizzas went down really well but I did add a few extras as toppings. The spicy bean pate was sooooo nice I can't beleive how simple it was. Would recommend to all :-)

    Ooh sounds fab! Will be checking that out. iI really am sorry I am unable to help out with this project as life is currently hectic but it's philosophy is close to my heart so will continue to follow as much as I can x

    Sorry to resurrect an old thread, but it seems daft to give it is own one.

    I'm making this today for the first time, and found I needed to add more water, otherwise it was way too thick to simmer.

    Is it just me?

    The thread is eight years old, the link no longer works, so you may never have an answer.
    However, now that I've read this thread, I really want to try the nut roast :) Better find a recipe :)
