This is weird, I was just thinking about this thread because I realised I'm stuck in a complete rut food-wise.
Simba the 3 bean chilli is part of my rutit is lovely.

this looks great, will be reading it fully as looking to try a lot more vegetarian food and only eat meat once a week---have been trying this recently but to be honest I think we have been overdoing the quorn thing0

I thought I would revive this thread, as we need to get out of a quorn based vegetarian rut! Maybe with all the food news recently other people might be thinking of more vegetarian meals too?

Ratatouille, Moroccan chickpea stew, egg curry, fritatta (not tried this yet though), Macaroni cheese/cauliflower cheese, jacket potatoes. Ive also tried butterbean and leek strogonoff.

Can't believe this thread has just come to light - I've had these 3 threads bookmarked for a couple of years now and was looking at them recently for some ideas!

These sound fantastic! I am a vegetarian student, living in France. People are not as open to eating veggie out here so I'm often asked (in a kind, but fascinated way) what on earth I cook/eat.
I'm going to whip some of these meals up and show my non-veggie house-mates that vegetarianism doesn't have to be dull

I am not vegetarian. But I like non meat foods a lot.
It makes me inventive!

Savoury Bread Pudding...
You can adapt it whatever way you like, add more veg, subtract, etc. according to taste. It is just so delish.
First get your day old bread either white or wholemeal. Or whatever your poison in the bread department.
Get your veg of choice assembled. Cook off to your preference. I am being deliberately vague here, because you can use anything really, honest.
So, you have for instance, onions, tomatoes, leeks, peppers and so on, and you fry them off till soft.
Then you whip up your eggs, with some milk and seasoning.
Then you place the bread in an oven proof dish
Then you scatter the veg on top
Then you cover the lot with the egg and milk mixture
Press down well to ensure all ingredients are doused in the egg. Put aside for a few minutes, or longer if you need to.
When ready to bake, press down again just to be sure!
Sprinkle with cheese of choice.
Place in oven 180 for about twenty or twenty five minutes, until it all puffs up.
Serve hot or cold.
My dish of the year, and great for using up leftovers of any sort.0 -

Melanzana, I used to make a Broccoli savoury pudding more or less in the way you made yours, the kids loved it, together with Broccoli pasta this dish taught them to love broccoli.
Broccoli loving children, a rarity in this world of chicken-nugget-guzzlers!Finally I'm an OAP and can travel free (in London at least!).0
