Looking for Caesar Salad recipe

Has anyone got a good, tried and tested recipe for Caesar Salad?

I had this quite a few times when in Canada last year and loved it but anytime I've had it in a restaurant in the UK it's not even close to what I had in Canada. I've also tried a number of recipes at home but never found one that is quite right.

I'm looking for a recipe that makes the dressing from scratch and doesn't use a ready made Caesar dressing as they all seem to have that synthetic garlic flavour.

    Thank you butterflylady - that looks like the job. I think the recipes I have tried in the past have used too much garlic and mustard so this looks very promising. Will give it a try at the weekend.

    My recipe is similar re croutons, diced cooked chicken (no skin), torn lettuce, slivers of crisp baconbut this is my dressing to whch you can add anchovies if you want
    • 125g low-fat natural yoghurt
    • 2 tbs low-fat mayonnaise
    • 1 tbs grated parmesan,
    • 30ml lemon juice
    • 1 garlic clove, crushed
    • 1 tsp Dijon mustard
    • 1 tbs white wine vinegar
    • Anchovies if liked
    Blend all together until smooth

    the recipe I use calls for
    4 slices of white bread cut thickly with crusts off
    about 2 or 3 cos lettuce hearts
    and about 2 oz parmesan cheese grated finely
    make chunky croutons with the bread and fry briskly in sunflower or olive oil

    then make the dressing
    you need
    3 tablespoons olive oil
    clove of garlic chopped fine
    juice of a lemon
    about 5 or 6 tablespoons of SINGLE cream
    quarter of teaspoon of Dijon mustard
    couple of teaspoons of capers if you like them chopped quite finely
    salt and pepper

    you use half the parmesan with your torn up lettuce in a bowl and add your croutons.
    then make your dressing


    in a saucepan warm up the olive oil then add ALL your ingredients. heat them all through whisking it all the time. taste and add salt and pepper.
    pour into your salad and mix up well.

    ohhhhh, i just love caesar salad, im gunna give them a go aswel.
    3 wonderfull kids :female::female::male:, 1 fab hubby :heart: , 2 beautifull cats and 1 very large dog = my family!
