Fish recipe please. Quick it's for tea!!!

Hiya all,
I've defrosted some white fish fillets for tea. Was just going to do ususal poached fish, veg and new potatoes but i fancy something different. Any ideas appreciated.
I have quite a lot of storecupboard stuff. Rice, pasta, spices, pulses etc. I also have a lot of veg in the fridge as it was sho:rotfl: pping day yesterday although i did forget cheese so i haven't this.

Sorry, I just thanked your post rather than pressing the reply button, doh!
Couple of things I like to do with fish:
1) (bit similar to poaching I suppose) do fish parcels by placing a slice of onion in the middle of a square of foil and place then place on top of that your fish (with some salt and pepper sprinkled on top) followed by a few chopped fresh herbs (I tend to do parsley), some thinly sliced garlic, then a small slice of butter and a slice of lemon. Pop this in a medium oven for about 15 minutes (depending on size and depth of fillet).
Again, I would serve with fresh veg, but you could vary your new potatoes by either slightly crushing them in the pan after they're cooked and adding some butter and salt and pepper or, again crush them, but place on a baking tray and sprinkle with some olive oil and salt and pepper, then whack in a hot oven until nice and golden and crispy (mmmm)
2) You could also make a nice crust for your fish by blending a couple of slices of bread into bread crumbs and mix in one or two crushed garlic cloves, a good handful of fresh flat leaf parsley, salt, pepper and some olive oil (just to help it stay together a bit). Then press onto the top of your fish fillets on a baking tray and pop into a medium oven for about 15 minutes (until the crust is nice and crunchy). (also, pop a smidge of olive oil on the baking tray before you but the fillets on to stop them sticking)
Hope these help - I know they're still along the lines of 'fish and two veg', but tasty nonetheless. A fish pie is another option, but I didn't want to make the post too long, but will send you my recipe if you like.

i got this recipe from good food this month, but don't have the actual recipe to hand so it is from memory.
in a microwaveable dish place a shredded little gem lettuce, add 2 chopped spring onions and a small handful of frozen peas. Add 2 tablespoons of half fat creme fraich and top with a fish fillet. season
cook in microwave for 6-8 mins until cooked. Portion is for 1 person. ANd I tried this last week - it was delicious.r.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -
Thanks for your quick replies. I think i'm going to make the fish crust served with veg and crispy roast new potatoes. Haven't got any cream or creme fraiche so i will try that next week. Thanks again.
