Hi,
All this hot weather has left me with a glut of green chillis from the garden. Besides, veggie chilli, I'm pretty much out of ideas of what to do with them. Does anyone have any cheap vegetarian recipes using green chillis?
Also, any cheap but interesting recipes for salad leaves? I'm getting a bit tired of my salad leaves, tomato, and cucumber salad. But I want to make the most of the veg I've been growing in my garden.
Thank you.

Chutney, Salsa? I would imagine chutney would keep for quite a while?

French Peas.
saute some sliced onion and a bit of garlic in some oil or butter. Add cooked peas, chopped lettuce ( a firm one would be best), some mint and a splash of white wine. Warm through and serve.
Apple and mint salad. try making you usual cucumber, tomato and lettuce salad. top with a salsa made from finely chopped, apple, onion, red pepper, mint and chilli with a squirt of lime juice through it.
Apple and mango salad. Again start with you basic green salad, slice some mango and apple though it and dress. Dressing raspberry vinegar, sesame oil, chopped fresh herbs such as lemon thyme, mint, chives, oregano etc.
Chilli go great with chocolate, chilli chocolate brownies.
Chop your chilli's up and freeze them great for using over the winter.
Chilli recipes - guacamole, houmus, Bombay potatoes, Salsa (tomatoe, apple and mint, mango), Mexican rice, mushroom pilaf, spicy bean soup etc etc Just use in any recipe that wants chilli powder.

Thanks! All of these ideas have got me salivating this morning. I'm especially happy to know that the chillies can be chopped and frozen. I can't believe I didn't think of chutney. I'm going to get cooking this afternoon.1
