pls help! breadcrumbs won't stick!

I'm about to make chicken kiev, but i've just remembered, i always have trouble making the breadcrumbs stick to the chicken breast!!

I dip the breast in beaten egg first, then put it in a bowl of home-made toasted breadcrumbs but half the crumbs always fall off:rolleyes:

I need to get it in the oven in about 15mins so if anyone's got any ideas on makin 'em stick better, please help!!

Have you tried adding a little flour to the egg mix? Might help the breadcrumbs bind to the chicken.

I always dip mine in flour first then egg, seems to help stop the egg being so slippery.

    Try double dipping

Flour > Egg > BC's , Egg > BC again , I do this with my scotch eggs and you get a nice thick coating - yummy
