We're Jammin' ......

I've got my first 3 pots of HM strawberry jam made, I grow the strawberries to eat but these had little slug bites out of them so they were out of the question for just eating as they were so they got jammed. We always have HM jam on Christmas day with croissants so I need to make sure I hide some away.

Anyone else jammed yet?

  • No particular recipe really, I just use the Jam Sugar (has added pectin) and follow the recipe on the back of the bag - you don't have to use jam sugar but it's just that bit more predictable.

You use an equal quantity of crushed strawberries to jam sugar, heat slowly till it starts to boil, turn the heat up a little to get a fast, but not furious boil then start timing 4 minutes then it's done. Pot up in jam jars that you sterilized by heating them in the microwave with an inch of water in them.
This method is easy if you just want to make a pot at a time rather than make a full day of it!

I used to use normal sugar and I had a bottle of apple pectin or something.

I'm going strawberry picking on Sat afternoon with the small person and then OH and I are going to make jam on Sat night only shhhh I haven't told him yet!! I use the special jam making sugar but the specific one for the soft fruits. Has been successful on previous occasions.

No jam yet ... but I don't grow strawbs. Will wait for the glut and head off to the local grower.

Made 6lbs of Lemon & Lime marmalade on Sunday though. Great thing is, you can make it at any time of the year :j

I'm lucky though as the pub landlady adds my order to her wholesale fruit & veg order. And I don't think she's very good at charging the right price...... £3 for 24 lemons & 12 limes :j

I simply love L&L marmalade as it has that kind of "slap around the face" taste to wake you up :rotfl:

Those who've not made jam before might want to use the saucer test to make sure that the jam's reached setting point.

Before you begin, place two or three saucers in the freezer.

When you've boiled the fruit/sugar mixture for the allotted time, remove it from the heat. Take a saucer out of the freezer and place a small tsp of the jam on the saucer. Wait for it to cool until you can touch it, then push the jam across the saucer. It's ready when you can see a very clear crinkly surface on the jam. It doesn't need to stay hwere you pushed to the edge of the saucer, but it must look very crinkly. If it's not, continue to boil for a few minutes, remove from heat and test again.

Or buy a sugar thermometer - jams and marmalades set at 110° and the thermometer should have a little line marked "jam" .... I mean, what else would it say? :rotfl:

Well done. Sadly I am very greedy with fruit and it does not last long enough to get to be Jam.

When I was expecting my daughter ( 40 in July) my Mom took me to a farmers auction. I bought 7lbs of Victoria Plums and ate the lot in three days,
everyone thought she would come early but she didn't.

I grow my own strawberrrys now and eat them straight off the plants.

Would love to hear anyone elses fruity confessions
