Low GI, Veggie AND cheap?

Is it possible?
I'm trying to eat a low GI diet to combat my blood sugar swings, but I'm really getting stuck as to what to cook that fits into all three of these. (And I don't like spicy foods).
I was thinking of buying a food doctor recipe book (no one will swap with me on readitswapit) but thought I'd ask on here before spending the money.
Does anyone have any good recipes? I'd be really appreciative.

    I bought a Low GI Book in Tesco (£3.47) which includes a 14 day veggie low GI planner - but I've been disappointed at the reliance on fairly expensive items (like avocado - yum! - but not always cheap) and although it does increase the variety of stuff you eat, you have to meal plan REALLY carefully so you eat all the various stuff you buy to follow the plan. Having said that, it's got some good recipes (like stuffed red onions) so I would recommend it. It's also good because it has the helpful lists of what is high/medium/low GI.

    Try beetroot - I'm eating/drinking some beetroot soup, as I write this!!!

    Boil fresh beetroot up with leeks and other root vegetables for about 1 hour until beetroot tender, then liquidise..simple and healthy.

    Why don't you go to your local library and borrow a selection of recipe books and keep doing this to build up a collection of ideas and to save you money on books where you may only use them occasionally.
