Hi all,
I need some ideas for an easy to make cake/cakes/pudding for children for a Christmas Eve 'do' -I promised my m-in-law I'd contribute. The problem is it can't be chocolate it has to be simple and transportable, and my oven doesn't do biscuits. I'm not all that good at baking and tend to rely on a few tried and tested recipes. (last Christmas Eve my posh cake failed and I ended up having to buy at the last minute -it raised an eyebrow or two!)

Hi, what about rice crispie buns? There are really niec ones you can make with marshmallows and toffees? Pot based, little skill required? Easily transportable?A little nonsense now and then is relished by the wisest men :cool:

I just had to do a similar thing for a party so I made some individual meringue nests and then had ice cream to put in them and then the kids could choose either banoffee ( bananas and toffee sauce) or berry (strawberries, raspberries and blueberries) and strawberry sauce to go on top. It meant I could be pretty sure of pleasing everyone, was simple to make and the kids loved it.0

Fairy cakes/cupcakes/buns or whatever you call them. Can decorate with a little white icing, little bit of green for a leaf and red for a berry.

Make some buns, ice them, then using 'roll out' icing make the snowman heads, do eyes, buttons and mouth with a cocktail stick dipped into black food colouring. Carrot Noses and Hats etc, are just made from 'roll out; icing and coloured with a bit of food colouring.
Very easy to do and Kids love them.

Makes 10
300g self-raising flour
1 teaspoon BP
1 teaspoon ground mixed spice
100g light brown sugar
175g mincemeat
1 egg lightly beaten
100g butter melted
175ml buttermilk
1 tablespoon milk
2 teaspoons demerara sugar
Preheat to 200C
Mix flour, BP, mixed spice and brown sugar.
In seperate bowl mix mincemeat, egg, butter, buttermilk and milk. Add wet ingredients to dry and mix briefly.
Spoon into muffin caes and sprinkle tops with demerara sugar.
Bake for 18-20 mins

Gosh, you are all so inspiring! I love those bus Zippy. I'm most tempted to have a go. I also like the sound of the Christmas muffins too! It is a family get-together, but I thought it would be nice to do something especially child-pleasing as there are quite alot of tinies there. Last year it was mainly just chocolatey puddings, so I thought I'd try and make something a little different this year0
