Last night we had ham and mushroom pasta bake. Cheap and easy!! Boil some pasta shapes, fry sliced mushrooms, grate a decent wedge of red cheese, thinly slice cheap wafer thin ham and whisk together two eggs.
Drain cooked pasta, add mushrooms, add ham, mix in egg mix and cheese. Transfer all this to an oven dish and top with more grated cheese. Cook in oven until cheese is golden brown. It's really tasty served with salad or garlic bread.
If you try it let us know if you enjoyed it.

What about some veggie meals, perhaps a Chickpea curry?Nevermind the dog, beware of the kids!0
-
Fry some onions and bacon pieces in a pan add some tomatoes and mushrooms and anythink else you might fancy, place in the bottom of cassarole dish.
Partly cook the cauliflower, drain and place on the mixture.
now add some cheese sauce or grated cheese on top and finish in oven.can finish with a little parmasan cheese.
omit the bacon if veggie.
Makes a light lunch or can be used as the veg part of a meal.Be ALERT - The world needs more LERTS0 -

Will you be having some of your options more than once? ie we have chilli at least twice per month.
Some nights we just have jacket pots for tea.
Omelette and chips.
Pork chops - love these sometimes have then with meat/veg and gravy. Sometimes grilled with wedges, sometimes make them into kebabs and have with pitta bread or rice.
Pork strips - slow roasted with sage and onion stuffing over them - delish.
What about roasts, we generally have roast pork or roast chicken - then can use leftovers for chickenwraps, chicken pasta or chicken pie.
Looking forward to other peoples favourites.0 -
I use this site to help remind myself what foods are going to be in season each month
http://eattheseasons.co.uk/
this helps me plan what meat and fish to buy as I can predict what my best bargains are likley to be (I'm close to a really good market)and make them go together. Eating food seasonally means you are eating food that is at it's best nutritionally as well as cheaper. It also means you rotate your recipes a bit according to the natural cycles. Otherwise I have to admit I'd end up doing the same old stuff again and again and again. The site is great as it has suggested recipes for seasonal foods I might not have thought of that I can adapt a bit.
For June British lamb will be around so my menu will include
roast lamb
lamb kebabs
moussaka
I know I'll be doing a lamb and aubergne dish casserole type dish - turkish style with pitta bread at some point next month.
grilled fresh sardines will feature as they are lovely on nice summers days just grilled with abit of garlic and basil with some toamtoes & green salad.
Our strawberries will be in season so I'm going to a pick your own place with bubs and my Mum. Gonna freeze some and make some jam (rain stopped play this month lol!)
puddings will involve cherries somehow as they'll also be coming into the shops at a reasonable price.
As a kid my Mum knew all the right seasons to get stuff but I can never remember. Shopping this way really does work out cheaper and its v. old style.0 -
Tesco have a good offer on turkey medallions - 2 for £4.00 - I bought 2 this morning and have made a huge casserole of them with loads of root veggies and a tin of tomatoes and a jar of chicken chasseur from the cupboard and celery and green pepper with onions etc and it has made loads for the freezer and have now packed it away - gave me 10 meals for the next month. Also did a casserole of steak and basic mince to have in freezer ready cooked so with stuff already in there I have enough for about 21 days without needing much more than veggiesSaving in my terramundi pot £2, £1 and 50p just for me! :j0
