I'm very pleased with myself as I got some bargain roasted vegetables reduced at Tesco tonight. I've cooked them and I want to make them into something I can have for my packed lunch for the next couple of days at work.
So...do I mix them with pasta? rice? I've got some cous cous but I'm unsure how to use it! Do I need to add any other ingredients?
Anyone out there got any ideas???

Use the cous cous,
If it's plain just boil up some water with a bit of olive oil or cooking oil in it add the cous cous, take it off the heat and let it fluff up, break up with a fork.
For a bit of a difference adding curry powder to the water gives a decent flavour or chinese five spice.Weight loss since 01/08/07 - 72 lbs:j0 -
I agree, cous cous for roasted veg, it is delicious. I use a weak stock to give a little extra flavour to mine.My first reply was witty and intellectual but I lost it so you got this one instead

thanks, I've cooked my cous cous (it was so easy, can't believe I've never tried it before), I just cooked it in water though. I've mixed in my veg, the veg is a little flavoured with thyme but it quite dry. Do I need to put any other dressing on my cous cous or will it be ok? I've got some feta cheese - do you think that would go if I just chopped some small and mixed it through?0

I usually "dress" my couscous with some olive oil, garlic puree, a dash of tabasco & some salt & pepper. I think the feta cheese would be lovely crumbled into it; I also like chick peas or chopped dried apricot in it as well.0
