I've never tried to do this before, but my OH will be working away for ten days from today and i wanted to try and make some to surprise him because its his favorite.
Any ideas on how i do that?

The only one I have made is bramble and apple jelly - you dont really taste the apples - its more to bulk it out and help set. it is 3lb bramles, 3lb cooking apples, 2pint water and sugar.
Wash fruit, slice apples thin but dont peel core or remove any pips(I soak my brambles overnight in cold water with half tsp salt all the wee worm things then float to the top, rinse brambles in cold water and then pat dry - dont know if anyone else does this??) Put all the fruit in a pan and simmer til quite soft - usually hour. Strain through Jelly bag - dont press through or it will go cloudy - tempting I know!! - I usually scald my jelly bag first with hot water as this helps to speed up the dripping, Measure the juice you have and for every pint add 1lb of sugar. Heat the juice in the pan adding the sugar slowly - once its all in bring the jelly to the boil quickly - try not to stir as this introduces bubbles into the jelly- after about ten mins check if its ready to set by either spooning some onto a chilled plate and it should wrinkle within a couple of minutes or invest in a sugar thermometer (I got one for £1.99 then you will always have it - most jams and jellies set at this point and you can also use it for sweet making) and bring it to the boil to 220degreesF or 106degreesC. If it isnt quite ready check it every three minutes after that. Leave to cool slightly before putting into warmed jars and seal when either hot or leave to go cold.
Let us know how you get on. This should make about 4 x 1lb jars - sorry everything is in imperial measurements!!!

use an old pillowslip if you have no jelly bag. sterilise it boiling in a pan of water for 5 mins or so.Teamwork means.......never having to take all the blame yourself0

Wish i`d seen this post before shoving all my fruit through a metal sieve with the back of a spoon earlier today :rotfl:
I know it makes the jelly cloudy but i`m not bothered by that - best thing is i`ve just unstuffed a pillow to use the stuffing to pad out my rather flat cushions so i have the inner part of the pillow that i could have used.

I used a pillowcase for crabapple jelly. It was clean. I wish I had known that scading makes the juice come out quicker though.
It tasted lovely but from 4lbs of crabapples I only got 1 pint of juice.Anyone who lives within their means suffers from a lack of imagination:beer:
