Cottage cheese how do you make it?

Hi, does anyone know how to make cottage cheese?
I thought that i would like to make some as we just love the stuff.

  • I have a friend coming over from the UK soon who doesn't eat any cheese apart from low fat cottage cheese. I've never seen that for sale here, but I have found a recipe on the internet to make it, which involves heating milk, adding a small amount of vinegar, leaving it too cool and pouring into a colander to allow whey to drain. Has anyone tried this and can you let me know how long it will keep for?

    Can't help with the recipe but isn't cottage cheese low fat anyway. I always thought it was or have i been mislead all these years.

    I haven 't made cottage cheese like this but made paneer (indian cheese) by using this method then pressing the curds together. It did work and was very tasty. I would say though that it comes out rather different from the ready-made cottage cheese that you buy off the shelf.

    Why does she only eat cottage cheese? If it's familiarity that matters to her, the home made stuff might not be right and she may be better to try and bring some with her if possible. If she just wants a mild curd cheese (whch is what cottage cheese is afaik), you may be able to buy something similar under a different name

    Sorry I can't help you with the shelf life as I used my paneer the same day

    Personally, when we made cottage/curd cheese in a science lesson using lemon juice and milk, I didn't really like it, but I love the shop-bought stuff. I would have thought that it would keep for a couple of days in the fridge as long as it is covered.
    Enjoy the little things, for one day you may look back and realize they were the big things.

    Cottage cheese has much less fat than hard cheese anyway, but there is also a 'low fat' (healthy eating) version in most shops. Less than 1% in most cases.

    Check out the info on the labels.

    She only eats a very low fat diet, hence only cottage cheese and skimmed milk, which is a shame because we have lots of lovely cheese here in France!

    I've looked up a recipe for paneer and I'll give that a go. Thanks
  • OK just made some with yoghurt and it's cooling in the fridge. The recipe suggested you could use the whey you drained off as the next starter. My question is, how long can I keep the whey?
