Evening All!
I have a fair few bananas left, rapidly going brown so would like some ideas of what to do with them!
So far i've been eating them alone or with custard. Don't have any ice cream unfortunately [i have a VERY small freezer!].
Am considering making a banana loaf or something, any recipe ideas? Can freeze and give to my brother if necessary as i live alone so probably wouldn't want it all.

There's a good banana muffin recipe here somewhere, probably page on of the grocery challenge, I've been making it lately with all those 49p bananas from Aldi. You can freeze the for cooking at a later stage as well, which is what I do, as I don't like ripe bananas very much, as soon as they are yellow I chuck 'em in the freezer. They look groos when you peel them for cooking, but they work perfectly.

There is a great carrot cake recipe on here somewhere which uses over ripe bananas as its liquid. That's my favourite wy of using them. I find banana bread over sweet, and when I've made it, it always sinks in the middle too.
I have been known though to make banana and choc chip muffins which go down well with the children.0 -
Banana cake:
4 Bananas mashed with a fork
140g Butter
250g Self Raising Flour
250g Sugar
2 eggs
Lightly grease a tin or some cake cases with butter.
Mix all ingredients together.
Put into tin/cases.
Bake for 15 mins at 180c.

Banana and Sultana Cake
1 lb ripe bananas, mashed
2 eggs
6 oz brown sugar
4 oz sultanas
8 oz self raising flour
Mix everything together very well in a bowl. Turn into a 2 lb loaf tin which has been lined with a butter paper. Bake at 160 C fan oven for about 50 mins? Or until a skewer comes out clean
This is a Rosemary Conley recipe and fat-free, apart from the eggs

I make a very quick pud sometimes in microwave. Sort of a warm tropical fruit salad.
I chop up a banana into chunks and drizzle lemon juice over it. I chop up a large orange, chuck in a few sultanas or raisins and add a little blob of butter. I like to add a couple of tablespoons of natural orange juice too. Then I sprinkle some dessicated coconut over top and microwave for a couple of mins. It's nice warm with cream, ice cream or creme fraiche.0 -
If you look through my posts I posted a recipe for Banana Pancakes recently (think it was in leftovers thread) which were yummy and taste best when made with black bananas!0
