Oatie Bake (Veggie Special for Old Style Easter Lunch)

Options
Oatie Bake Recipe. This is a lovely veggie main course that we eat with all the usual roast dinner acompaniments (roast spuds, veggies, gravy etc). Haven't costed it but uses cheap everyday ingredients...

5 oz oats
4 oz grated hard cheese
2 oz melted marg + little extra for top
1 finely chopped onion
1 large finely chopped pepper
1 large tin drained sweetcorn
1 large egg beaten (or 2 small - important to bind it together well)

Mix all ingredients together in a large bowl. Press firmly into a greased/lined baking tin. Brush top with melted marg. Bake on Gas mark 6/350 F for 30 mins or until golden on top. Serves 6-8.

    Thanks so much for this recipe annie-c, I've been veggie for years but have a really bad diet, I seem to live on chocolate and have been trying to eat properly for the last few weeks.

    I'm not actually a veggie but have just picked up recipes along the way from family and friends... and I like to make things with chopped veg cooked in as I am rubbish with fruit and raw veg sometimes!

    Thanks jay-1. I made it for lunch... an extra tip: if you only have small eggs (like I did!) then use 2. Mine was lovely but fell apart a bit when serving!

    That sounds exactly what I might need! I may have to cater for OH's overindulging / overeating son and daughter-in-law plus veggie *I'm allergic to everything* daughter over the next few days. Thanks!
