hi all i have 3 chicken breasts in my freezer that have been there yonks !!!would like to turn them into loadsa soup for feeding me n the kids during the day as ive realised that lunch is the dearest time in our house im sorted for dinners its lunchs i need to cut back on .anyway all the chicken recipes ive found on here are for leftover chicken do i just do the same but use the breasts or is there another way of doing this???im trying really hard to cut back as my flamin maternity pay has just finished leaving us 95 quid a week worse off!ouch!
i know its not that economical to use the breats for soup but they have been in the freezer ages and may have reduced flavour at least with soup i can flavour it up by adding stuff.
also does anyone know if i can use a kenwood smoothie maker for liquidizing soup?

No problem. Firstly cook the chicken breasts, either roast or fry or grill, whatever you prefer. Then chop & add to chicken or veg stock with whatever you like. You don't need to use potatoes (I never do in chicken soup) but onion & carrots are a must for me, plus mixed herbs & garlic, whatever else you want/needs using up. Mushrooms work well, so does butternut squash & courgette but it's really upto you. Simmer for 1-2 hours on very very low, then skim off any fat. Allow to cool slightly then blend in the smoothie maker (Yes, it does work but don't use the tap, just pour it out). Allow to cool fully then freeze/refrigerate as required.

Making ANY sort of soup.......
Fry onion, or mushrooms, or leeks, or anything tasty. Cut chicken (or whatever you consider your main ingredient to be) into bits and add - cook through. Add about a third of a cup of flour, stirring furiously. Add stock, or water, or milk, or milk and water mix, little by little, still stirring furiously. Add anything else you fancy.
It's basically like making a white sauce but with flavoured bits!!!! HTHEx board guide. Signature now changed (if you know, you know).0 -
brill thanks i recon if i add enough bits n bobs i could get a weeks worth of lunches out of 3 chicken breasts!cant wait to get started as soon as the baby has finished this bottle im on a soup making mission!i may christen my newly inherited dutch oven for this since lilibet says it needs to cook slowly.

ok so i cooked breasts on the george foreman chucked a pint and half of vegy stock in dutch oven with some mushrooms (not past their best but heading that way!) 1 small onion a leek and some garlic butter that wanted using up, just added the chopped up chicken and is simmering as i write this .it smells blindin!will post the outcome later.

You can also cook chicken breasts by boiling it in a pan of water for those who are watching the calories. I've done this before when I've defrosted them and found our plans have changed. Can then either chop them up and use immediately or refreeze for a later meal!

change of plan it smells too good not saving it for luches having it for tea with toasted cheese sarnies!!!
also just strained a tin of tomatoes and lobbed those in.i cannot believe i never did all this before the possibilities are endless my lots gonna be so sick of soup!!!
