Hi guys have never ventured in this board before but from what i can see it is great.... I really like the mega index thread but even with looking through it i still cant really find a recipe that will allow me to put to use some of the strange stuff i bought in an effort to cook a meal tonight.
I have a red pepper, onion, broccoli, salad mix, potatoes, Baking potatoes, garlic and the usual stuff like eggs and butter.
Dont really know why i bought this combination my girlfriends a vegetarian so i thought about just boiling it all and feeding it to her with a baked potato but that sounds pretty lame so i was wondering if anyone had any ideas what i could do with this lot?

You could do a nice vegetarian frittata. Basically a posh word for a thick omelette!
All your veggies including finely diced potatoes could go into it and it just needs cooking over a low heat.
Serve it with your salad and that's it!0 -
fry the red pepper, onion, broccoli and garlic in the butter.
Cube the potatoes and boil until soft, add to mix, Beat eggs and season, pour over the mix over a low heat. When set grill the top.
IN the meantime, bake the potatoes and prepare the salad.
One meal of spanish tortilla, jacket spud and saladI haven't got one!0 -

Chop the onion, and cut pots into 2 cm cubes. Cut pepper into strips. Remove garlic husks and top n' tail.
Place all ithese in large bowl and drizzle oil over the top, so all bits are coated (olive oil is best). YOu can alos sprinkle in curry powder/chilli if you want it hot!
Put all these veggies in an ovenproof casserole with a dash of water, roast at 200 degress for about 30 mins. ( best to cover the dish with foil, if you can).
Add salt and pepper to taste.
Delish. You can serve this with scambled egg for a really nutritious meal.
I do this dish a lot, as doesn't generate a pile of washing up and its tastes great.0 -

I would add quartered potatoes to masala along with pepper and broccoli, saute for a couple of mins and then add a little water to make a sauce (thick -serve with naan/pittas or thin - serve with rice, as you like). Cook until veg tender. Can add peas for last 5 mins if liked.
Boil eggs, shell and halve. Add to curry and serve with salad/rice/naans
Frittata is good too - though we'd 'spice' it up a bit by adding ground coriander, ground cumin, red chilli powder, chopped green chilli and chopped fresh coriander!
