I have joined the 'buy now & wonder what to do with it afterwards' club.

Any ideas for 2 cartons of jerusalem artichokes ? 10p each from Waitrose

I bought OH reduced chicken livers in there aswell & because he doesnt read the carton he thinks he has a real treat rather than 39p of reduced offal !

    Soup is the way to go with the artichokes.

    If you've got a couple of rashers of bacon fry them with some onion(in butter for best flavour),add the peeled and chopped artichokes.Cook for a few minutes,then add stock.Simmer till the artichokes are soft and puree.Add a bit of cream if you like.Delicious and it freezes well.

    If you've got a lot of chicken livers I would suggest pate-garlic,butter,onion/shallot cooked for a while,then add livers cook for a few mins, add a splash of alcohol-brandy or sherry,season and blend.

    If you've only got one carton I'd use them in a pasta dish or cut up small in a pilaf with raisins and pine nuts.

  • I love the sound of that soup, thank you,definitely be trying that.

    OH cooked up his chicken livers last evening,sauted then with a few spices I think. We had a sort of Mezze of all sorts for supper. In fact as he was in cooking mode he also did a really big lemon chicken with potatoes for today but we have so much left from last night that we wont get to it until tomorrow. Looks like it could be Tuesday before there is a gap big enough for my artichokes ! Thats what happens if you go in Waitrose at chucking out time on a Friday evening, tons cheaper than Lidl but not the most conventional of stuff.

    We grow Jerusalem artichokes and us them mostly in soup - Delia has a lovely carrot and arti soup recipe, also peel, slice thinly cover with stock (bouillion powder is fine mixed with hot water)and bake in the oven . Can chop and add to other veggies to make sauces for pasta etc.
    Weight loss - here we go again - watch this space!

    Jerusalem artichokes are so lovely. I discovered them at reducing time too.

    You can thinly slice them (once you have peeled off the skin and dodged the knobly bits) and pour cream and some cheese over them and bake in the oven.

    Nigel Slater talks about them in one of his books, he says that even if you don't like the taste of them you will enjoy them because they give you wind everyone enjoys a good trump :D
