what to do with haddock 'offcuts'? asap please

i have just been given a big bag of fresh haddock 'offcuts' :D theres about 600g in th bag and they are all at least 'fish finger' size and varying thickness.

i would like to use them tonight but am really un-imaginative whn it comes to fish.

its too sunny for fish pie and i am on a diet so dont want to fry them, i have a well stocked larder and plenty of salad stuff but not many other veg. i quite fancied tandoori fish but i dont have any yoghurt :(

any suggestions would be great :T

thanks,
vixtress xx

    Hi vixtress,

I would still favour fish pie as it's one of my favourites, even in summer, but what about using them in a quiche with the salad? Or if you have rice and eggs could you use them to make kedgeree? Or if you have cream they would probably make a lovely sauce to go with pasta.

How about making them into fishcakes or serve it with a cheese sauce and veggies to make Haddock Mornay. You could mince the fish and make it into fish burgers to BBQ

I would try a kedgeree or haddock in a cheese and chive sauce - with new potatoes and sweetcorn - delicious!!!
Smoked haddock and cheese fishcakes are nice - and haddock and chips always goes down well in my house!!

You`ve probably eaten them by now but dipped in beaten egg and rolled in herby breadcrumbs with a dash of lemon juice would be my choice before baking in a warm oven...............mmmmmmmmmmmmmm.............

perfect for a chowder. Fry a chopped onion in some butter in a saucepan and add some sliced potaoes then add some stock and milk and season then cook until the potatoes are soft. Then I add some frozen peas and sweetcorn and the bits of fish cut up into bite sized chunks.

It should be the texture of a sloppy stew or very thick soup
It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

fishcakes are dead easy - cook the fish (however you want - oven, fry etc) then break it up and mix it with come mashed potato and spring onion then fry for a few mins. i don't even bother with the breadcrumbs and stuff on the outside - they are still lovely. easiest way to get by 6yo DD eat fish that doesn't come in finger form....

There you go, you've kinda answered your own question. Or at least given yourself a suggestion :D home made fish fingers rock!

    My suggestion too!
You could add sesame seeds to the breadcrumbs if you want more 'crunch' or parmesan if you want a slightly cheesey taste.
    Yum!
