Tonight for tea im making an aubergine pasta dish, no recipe something i sort of throw together occasionally. It contains beef mince, onions, peppers, tinned toms and of course aubergines and herbs and spices.
However my son has just gone vegaterian so any idea's what i can use to replace the mince in a portion for him? my inital thoughts are beans or lentils but i figure he's going to get REALLY sick of those if thats all i feed him but i'd like to keep his protien levels up cause he's one of those kids that just seems to do better with protien it keeps him full for longer.

You could try using the Quorn mince in his share.
Or just use some different tinned beans.
Miss Twit loves butter beans and if you start to get the dried ones, you can soak and cook them and then freeze, so it makes them quicker to use
Miss Twit has just returned to being veggie and I often look at veggie ready meals for ideas. M&S do a mediterranean veg lasagne that is lovely.
I've made some of the lentil pate from Weezl's thread. The recipe is linked from the first page and it was really easy. Next time, I would probably boil the onions to make them softer. I suppose they could be mirowaved.
You can often find veggie stuff such as sausages in the reduced section, always handy for a sausage, egg, chips & beans tea.Official DFW Nerd Club - Member no: 203.0 -
Cheese or a cheese sauce is easiest or serve a couple of veggie sausages on the side. You're going to get really fed up fiddling round trying to replace the protein in one portion of family meals!!0

Quorn mince is also ment to be good for you too. Most stores have it on offer for a £1 at some point, i usually buy it then and stock up.0

I prefer realeat mince as a fake meat it is sometime in supermarkets and often in health food shops its a similar price to quorn and is in a green packet.
The greenish brown small lentils as nice as a meat replacer.
Or how about toasted pine nuts or flaked almonds that would be nice on top.0 -

Leave it out all together and make this for all of youYou can also make the sauce over pasta (without baking, IYSWIM). It's delicious :T

What is the "soy mince" like? i popped to the health food shop and they had bags of dried soy mince for £1.49 .. according to the instructions you add boiling water then treat like normal mince? it doens't sound niceis it ok?? he's not really a picky child will eat most things tbh but i don't want to poison him with something horrid haha.

I used to love the Quorn products, including the mince... Never tried other faux meat options other than quorn so can't comment (was a veggie for a year)I love surprises!0

without the mince you have much of what is needed to make Italian Caponata, its usually a side dish, but, its nice with pasta.
