  • Good old recipe that Stephen and glad to see you reviving it ! I haven't had a microwave for a while but I did used to use the micro then bake method for jacket spuds and it was fine ( wouldn't advise doing the kidney spud thing from start to finish in a microwave though ). If anyone is worried about putting the oven on just for one thing, try and think what else you could pop in there to make the most of the heat - best to plan ahead but I realise this isn't always possible. You could always slip some more jacket spuds in to cook and reheat later on !

  • Well, thriftlady, I followed the kidneys and red wine recipe through this evening and served it on basmatic rice, with steamed carrots. What a treat! My son loved it too. I made enough for 4 and froze half so I can revisit this delight next week. Yum!

    The Baked Potato & Kidney recipe does assume the use of the long slow "all oven" method, so that the juices from the kidney, butter, fat from the bacon, etc. are soaked up into the potato.

    I reckon that it ought to work with the microwave/oven method for the potato, if you turned down the oven, so that it takes the 20 to 30 minutes specified, for both the kidney to cook thoroughly and the skin to go crispy.

    PS. I've just realised that the recipe doesn't actually give an oven temperature. I shall have to check that out and update it.
