  • My lot love kipper kedgeree - flake some cooked kippers ( 1 pack is enough to make a meal for 4) boil some rice add peas or sweetcorn then the flaked kippers then boil 2 eggs and quarter them add to rice mix and serve ( I am naughty and drizzle the butter juices from the cooked kippers over the rice.

  • A useful one for using up wrinkly veg is Good Woman's Eggs

    Put oven on at Gas 6 or 180 C fan

    1 tablespoon olive oil
    1 onion chopped
    1 clove garlic, chopped
    mushrooms, sliced
    1 potato, in small cubes
    anything else, such as peppers, carrots sliced thinly

    Put in a large oven proof dish, turn over in the oil and put in the oven for about 20 mins until the potato is soft and the onions browned.

    6 eggs, beaten
    if possible, 2 tablespoons of cream or Greek yog
    grated cheese

    Mix the eggs and cream, season and pour over the veg. Top with the grated cheese. Put back in the oven until set and the cheese has browned. The time depends on your dish. About 10 mins

    This is such an easy dish as there is no frying off beforehand and it will take lots of variation

    We have any of the cheap fish with a packet of savoury rice between us. The mushroom one os lovely.

    A quick potato salad, for when you don't have any leftovers, is a tin of Jersy potatoes, a good store cupboard staple. You can use cheaper ones of course. Also, I often use tinned beans, butter beans, canellini, or borlotti, as a fillup with salad, you can drizzle salad dressing or mayo on them, or just eat them naked yummy and very filling and of course they are also protein foods so very satisfying.

    eat less, do more!

    A heart breakfast fills you up, and gives you a boost to the day.

    try rice rather than spuds.

    steam / grill food, rather than fry / boil.

    Cut down on boozing & smoking, and avoid late night takeaways.

    walk / cycle more, rather than drive (to the shops? how lazy!).

    hen blow all the money saved on a massive bar of chocolate.

  • Not quite 'spring' food, but I think making a Lasagne is always good - quick to prepare and if there are only two of you it can last two meals - healthy and tasty with a bit of salad.
