Hello OS'rs
I'm just putting together our meal plan (+ Mr T shop) for next month.
Me and mine are getting a bit fed up of winter stodge now and I'm trying to make next month more of a 'spring' affair.
I haven't thought of anything yet except falafel salad and omelette salad!
We like fairly traditional fayre 3 meat eaters and one veggie.
It's also going to be a VERY difficult month financially.. does anyone have any more exciting ideas?
(p.s I also work FT so quick or prep in advance type meals work best)

Hi. We buy boil in the bag kippers from sainsburys for about 80p. With some baby potatoes and salad. Cheap, light and quick to do:j This year is my year 2009 :j0

Thats a really good idea, I hadn't thought of fish either so you've given me more ideas. i think mussels will be available too soon ..mmm
It's a shame my kids wont eat kippers but I'll come up with something for them.0 -
mackerels are very easy to do aswell just pop under the grill. im not a fan of kippers but i love smoked mackerel.
how about home made pizza, loads of salad and with home made potato salad.
pasta salads,
fish cakes,
fajitas or enchiladas with a pile of salad
ill think of more in a bit
i like a piece of grilled chicken with a nice tomatoey spicey sauce with some new potatoes and salad. or any sauce you like!
its also nice if you stuff a chicken breast with cream cheese and wrap in bacon, stick in the oven, have with some chips or new spuds with saladWhat matters most is how well you walk through the fire0 -
Pizza, pasta, tapas, wraps, quiche, baked pots with salad/cold toppings, panini style sarnies - nice with garlic mushrooms and mozzarella, spanish omlette.

How about Fajitas - you can get away with using just a small amount of meat and adding loads of peppers, mushrooms, onion, etc. They are very quick to make, versatile and tasty too! Serve with salad, wedges or nachos.0

Roast veg (tomatoes, mushrooms, courgettes, peppers, onions etc) is great as an accompaniment to meat or on its own with some new potatoes. You can eat it hot or cold.0

When the weather is warmer, instead of a proper roast with the trimmings, we would have the meat with warm boiled potatoes and salad with a dollop mayo instead of gravy. You could also serve the meat with roasted veg like peppers instead like maman suggests. I think most bases have been covered already here thoLove and compassion to all x0 -
Hi, don't usually make suggestions but...
I make a tomato based sauce up by roasting veg (courgette, carrotts, onion, mushrooms, garlic, pepper) until nicely charred, I then blend these with my hand blender (smooth if my dd is eating) and then add a jar of passata and tin of tomatoes (blend again if you want.). Not only does it mean my daughter eating loads of veg but it also makes great pasta and potato bakes and lots of it! As it makes quite alot I also freeze it and this works well. I have also used it for pizza, chilli and spag bol but I know you're not looking for that.
Other alternative to JP is baked sweet potato - my dd loves it and it def breaks up the hum drum of ordinary JP's on a tight week!Happiness is wanting what you have...0
