    Here is my menu & costings I work on a rolling 3 week menu. All main meals serve 4.
    Weekday breakfast is porridge, museli or toast, approx 12p a person.
    Weekend breakfast is usually full english 48p per person, we tend to eat only 2 meals a day at weekends.
    Packed lunches are 69p per person, this includes sandwiches, and/or yoghourt, choc bar/home made cake, crisps, 2 pieces fruit.
    Now for the meals, where I have made more than one meal from a chicken or joint of meat I've added all the ingredients together for all the meals & divided the cost by the amount of meals.
    I cook a joint every Sunday & use the leftovers for other meals. And so we don't end up eating the the same meat for an entire week when I cook the joint I also prepare all the other meals & freeze them. I don't often do a pud, but I bake a large traybake, such as flapjack, lemon drizzle, shortbread, choc chip or a plain iced sponge, we usually eat a slice after our evening meal.

    Beef Casserole made with left over beef from previous week, dumplings & mash £2.73
    Fish Pie carrots & peas £3.60
    Spag Bol, made with fresh mince £1.24
    Chicken ham & mushroom pie made with left over chicken from previous week £1.50
    Toad in the hole mash & cabbage £2.30
    Pork curry made with left over pork from previous week £3
    Roast beef £3
    Risotto made with left over chicken from previous week £1.50
    Gammon & egg & chips & beans £2.19
    Tex Mex Chilli Wraps £3.54
    Sausage & Mash £2.10
    Fish cakes £1.50
    Beef Broth made with left over meat from previous week £3
    Roast chicken £1.50
    Pork in Cider/apple juice £3
    Beef & mushroom pie made with left over meat from previous week £3
    Carbonara made with left over meat from previous week £1.50
    Cottage pie £1.54
    Beef in red wine/beer made with left over meat from previous week £3
    Chicken soup, made with left over meat from previous week £1.50
    My menu is more expensive at the moment as I have 2 lodgers staying.

    I haven't read all your recipes yet but just wanted to add another big thanks for posting all this info. It must have taken ages to write it all up! That cobbler sounds delish and i'll be giving it a try tomorrow night. Really looking forward to it :D

    I was trying to think of ideas to further reduce my shopping bill I managed to reduce it Jan and Feb, just wished I saw this thread before I did my shopping today.
    I have hubby and three children as well don't need to include little one in that number really because she dosn't eat a lot.
    How much more do you think I could get my shopping bill down by following your good ideas?
    Last month I spent between £130 and £140 this includes tolietries and cleaning as well .

    I've got a question about the fruit cobbler. My OH loves puddings but he's diabetic, do you think I'd be able to make it using granulated sweetener instead of sugar?

    The ingredients on that list will cost you roughly £16. Then as most of them are store cupboard ingredients the next week should cost you about £11 ish.

    Gave the fruit cobbler recipe to several people on my course yesterday - all were off to try it for pudding last night! Will let you know next week how it went!

    BS - you're going to be a bit like Delia soon, every time you mention an ingredient the supermarket shelves will be cleared!

    I'm going away tomorrow/tonight (depart at 2.30am :eek: ) to Germany and I will be back on sunday. I'll keep logging into here until this evening but after that I will answer any queries on sunday.

    Recipe for lunchtime soup

    Take 1 small chicken breast, 1 onion, half a packet of scotch broth mix, handful of mixed herbs, a few frozen peas, one potato peeled and chopped and 1 carrot peeled and chopped. Put all these ingredients in a slow cooker with about half a pint of boiling water and cook in the slow cooker for about 4 or 5 hours.

    When cooked puree and either transfer into individual portions and freeze or transfer to one large container and chill.


    How on earth do you make that stretch to 9 portions? :eek:

    Maybe we're just greedy here but I'd struggle to make two decent portions from those quantities :o

    Its only 1 mug full a day. Its quite a runny soup I must admit.
