Yey well done piglet!!! Really happy for you!!xx
Plain old ham sandwich and some fruit (from home of course!) for lunch today, and tea will be leftover meatballs from last night! So NSD for me again - I'm beginning to wonder how I'll ever meet my Sealed pot target now I dont spend anything at work PMSL x0 -
I've been really non-MSE and got myself a Boots mealdeal today, there was pretty much nothing to bring in from home, so decided to have a treat. So, I've a got a chicken ceasar wrap, crips and a bottle of coke...and a cream egg to finish...mmm

Soup and cheese-topped bread rolls for lunch today, and a jacket potato with ham, coleslaw and salad this evening.
Won't be logging on again now probably until Monday evening because we are going to visit my parents and leaving early tomorrow morning (and usually come back late on Sunday evening), so have a great weekend everyone!

fluffybishop wrote: »I am not one for weighing and measuring :rotfl: but basic recipe is -
1 large butternut squash - diced
1 large onion diced
garlic [optional]
vegetable stock
herbs [optional]
salt and pepper
olive oil
Heat the olive oil and 'sweat' the diced butternut squash to soften it. Add the onion/garlic and cook that until onion is transparent.
Add the veg stock and [extra herbs if required] and simmer for half hour or so.I am not good on times either !!! :rotfl: I go more by appearance and taste testing a lot :rotfl: Add salt and pepper as required, then blitz in a blender to give a smooth consistency. Yummy and very easy. Is great with hot crusty bread and loaded with nutrition :T
Hi
Hope I'm not hijacking?
Another great way with the squash (and cheap) is
1 squash
2 red peppers (frozen work fine)
1 Onion
Stock of any kind 1 pint/ estimate to what you are cooking in
I grill peppers til almost black (if fresh) frozen then cook as well as I can. Squash I put in oven whole or chop up and grill with Peppers. Sweat onion in a little butter or if dieting fry-light or whatever.
All ingrediants in pan and add stock.
This recipe is almost 'spicy' with a creamy texture,it is lovely with a dollop of creime fraiche as serving I always whizz it up and have smooth as texture of Tomato soup.
Hope you didnt mind me posting?

Egg fried rice with chicken and vegetables for dinner this evening.
Lunch didn't happen for me today as it was the first day at my new part time job, I ended up doing more hours than anticipated, and didn't stop for a lunch break!
Must make sure the same thing doesn't happen tomorrow...
