Kippers - just wanted to say big thank you for the rhubarb jam recipe. Made it on Sat night/Sun morning (chunked and sugared the fruit on Sat night). Sadly not home grown but Sainsbugs and Co-op both had 400g packs on half price. Bought 4! Have to say, one of the nicest jams I have ever tasted, and I'm still a newbie to this preserving lark so am well pleased! Might buy some more rhub on my way home tonight before offer ends. Have already diaried for next year to buy rhubarb crown in February!0

Given that goosegogs are in the shops now, has anyone tried this recipe? Wondered if it was one to be recommended? Sadly don't have time to go and pick elderflowers but liked this recipe because it uses elderflower cordial so I could still get the taste.
What a monster you lot have unleashed. Me, who only ever bought expensive jams and chutneys now making my own most weekends ........ the cubby hole under the stairs is now becoming well and truly crowded with all the preserves in there!0 -

I've just potted up 5 jars of sweet roasted beet relish using the River Cottage handbooks recipe. I added a couple of additional ingredients and am well impressed. It tastes very similar to one I bought at a show last year. I've got loads more beetroot at the allotment and now I've mostly followed the original recipe and tasted it I'm pretty sure I can improve it even more next time.

sorry if i am being a bit thick - i have had a brief look about but can't see a concise thread dedicated to preserving - I am wanting to look at all sorts of recipes for home made edible gifts but everything so far seems to be spread about
Also does anyone have any easy recipes for jams/pickles/chutneys etc that I can make now (or in the next few months) for christmas prezzies

Hi not totally new to preserving as made lovley xmas chutney in december which went down well really keen to give jams a go have been saving old glass jars for months.
picked our own strawberries at farm cleaned and frozen ready to make jam.
A jaimie oliver stawberry jam recipie as shown on his at home programme has caught my eye but seems diffrent to many other recipies as dont think theirs any pecton and he said dont add too much sugar should last up to a year and less that hours cooking time so worried wont preserve well would be making in july and giving as xmas present.
farm has pick own gooseberries/rasberries so sorted there.
might buy some rubarb as often see it reduced.
marmalade am I better off waiting just before xmas when oranges in season.
shall i make mincemeat months in advance.
plan to do blackberries.
How best to preserve apple sauce.
growing own tomaties in garden plan to make lots of chutney.
we growing onions thinking might pickle.
anyone know how best to preserve roasted veg such as peppers, chillis ect i was thinking just olive oil.
