    PEACH CHUTNEY
    1 Small root ginger peeled and bruised
    6 ripe peaches skinned, stoned and sliced
    100g sultanas
    1 teaspoon salt
    2 large onions finely chopped
    375g demerara sugar
    3ooml malt vinegar
    1 tablespoon mustard seeds
    1 lemon juice and zest

    1. tie the ginger in a muslim bag or piece of cloth and tie then add to preserving pan
    2. add all the ingredients and bring to the boil, reduce heat and siommer for 1- 1 ½ hours stirring occasionally until the mix is thick
    3. remove the musliim bag and sppon jars and seal

    i made it too thick the first time but it was still nice and i ate it straight from the pan

    Hope this helps someone and let me know what you think of it....must admit its one of my favourites.

    i love red onion marmalade i make this all the time as no one else in the house liked it i get it all to myself...its lush worth making

    I bought some seville oranges today and have prepared some for making marmalade tomorrow.

    I've got an old book which I picked up in a charity shop a while ago - it's called Let's Preserve It by Beryl Wood, and has loads of recipes (well 579 to be precise!). One of them which struck me as particularly OS is Orange Peel Marmalade. For every 6oz of peel you use the juice of 3 lemons, 2 pints of water and 2lb of sugar. I'm going to make sure my family keep all their orange peel in future so I can make some marmalade from it!

    ETA - I've just googled this book and it seems I'm very lucky to have a copy! It hasn't been published since 1972 and is as scarce as hen's teeth! A bargain 50p I think!

    Does anyone do seedless jams using a Kenwood chef colander/seive thingy??
    I have all this years fruit exploding my freezer and need to have a jamming session :D
    Would love any tips please thanks

    Just a note to say that the blackberry vodka and peach vodka were well worth making. I have been using the blackberry vodka as a cough medicine too.

    Wow... thats HARDCORE ;)
    And if it works, it works... Fantastic. I'm not sure I would want to drive after such "medication" though :o

    I just strained my sloegin tonight...
    I put a large cinamon stick in this years batch... but didn't put as much sugar in ...
    Its not too bad.
    I will leave it a few weeks then taste again.

    I think I will try the marmalade...
    I seem to use more of that than jam... so it may be the way ahead for me ;)

    I bought 6lb of seville oranges yesterday, and used 2lb of them to make marmalade this morning - I've got 8 jars. I'm going to use some of the others in a three fruit marmalade (using three lemons I've had in the freezer for ages), and maybe freeze any leftover ones for next year. I obviously bought too many!

    I've got blackberries and bilberries in the freezer, so I think I'll defrost them and make jam, then I shouldn't have to buy any jam or marmalade for the rest of the year!

    Looking at my jars lined up in the kitchen gives me a warm, fuzzy glow! Am I sad?

    This marmalade making malarkey is very hit and miss! The marmalade I made yesterday is perfect. Today I made a three fruit marmalade, followed the recipe exactly, used my thermometer to make sure it reached the right temperature, then put it in jars. When it had cooled it hadn't set, so I poured it back into the pan, brought it back up to setting point and re-potted it. I now have 8 jars of three fruit sauce :confused: Any ideas how I can use it up? :rolleyes:

    I did this recently with apple and blackberry jam :o

    The label on the jars now says ice cream sauce and i pour just a bit over the ice cream, also its very nice poured into a bowl with digestive biscuits dipped in :D
