Thank you for that link - I did see Kirstie make it on the programme and it looked very nice - loads of ingredients though!! Will probably have to go out shopping tomorrow to buy apples, oranges, a gadget to zest the oranges, etc. (Not very moneysaving :rolleyes:).

well my preserve baskets went down well and my dad has a jar of spiced peach chutney almost finished...lol
i have decided this year i am gong to make peach chutney, plum jam, strawberry jam and loadsof beetroot chutney and also more red onion marmalade.
I am also going to have a go at cherry jam.
I realise it is the fruit chutneys i am more into than the veggie ones.
the pickling turned out okay too though they pickling spice seemed really strong. can pickling spice be watered down ? I used the sarsons one and it seems really strong. Any ideas?0 -

I made a red onion marmalade recently, which was really easy....
100g unsalted butter
3 large red onions, thinly sliced
75g brown sugar
100ml red wine vinegar
250ml red wine
salt and pepper to taste.
Melt butter, until its a light brown colour. Add sugar and onions, cook on a low heat, for 30mins, stirring so it doesn't stick to the pan. The onions should be soft and caramelised.
Increase heat to medium-low and add the red wine vinegar, and red wine.
Cook for approx 15mins until its a dark mahogany colour, but not burnt.
Salt and pepper to taste.
The recipe says the quatitys above makes 280g.
I actually doubled the recipe...and got 4 biggish jars, so I wont have to make anymore for a wee while0
