We finally managed to get some elderflowers and made a batch of champagne. Have been degassing it every morning as we only made a small batch (3 gallons) and I don't want to lose any to explosions!
Also made a few batches of strawberry jam. Some made with fruit we picked at our local PYO farm, and the rest made with fruit that was reduced in the co-op. Should have enough to last most of the year as long as hubby stops giving jars away to work mates!0 -
I'm not sure if this is the right place to post a question about my blackcurrant jam.... but I didn't want to start a new thread for a wee question
I made my first jam's yesterday. A strawberry, which is lovely :j and a blackcurrant, which is tasty, but it has the consistancy of toffee
Is there anyway I can rectify this ?
Also its in quite a tall jar, so I am not sure how I will get it out of the jar, if it is savable

Sounds like you boiled it for too long. I don't know if you can do anything about it now. Perhaps if you warm the jar up in a pan of hot water you might be able to get it out.0

I made a plum jam that had gone a bit too far and wouldn't have been nice as a spread so I scooped it out into a pan and added a good splash of hot water before using at a base for these little beauties http://www.playinghouseblog.com/2009/05/more-bars-in-more-places.html
It depends just how toffee-ish it is whether it will be useable for anything else but try adding a bit of hot water then tasting it. To get it out I think Gingervamps tip is most likely the way forward.0 -

My partner wants Elderflower champagne for our wedding next year so I thought I would have a little practise this year to get it right.
