  • has anyone got any idea how I can use up marmalade that hasn't set? I have tried to reboil etc but it hasn't worked - so now I'm looking at other ideas.... have thought about bread and marmalade pudding, marmalade cake .... but I have loads to use up! lol

    I had the same trouble with the last batch of marmalade I made. It's a good idea to use some in a fruit cake, but we're just using ours up on toast - as long as we're careful it doesn't make too much mess :D
  • You could add it to the bottom of a steamed sponge pudding. Otherwise I have used it later in the year when making damson mincemeat. As long as it is in the jar it will keep for up to a year. When the damson season comes round you can use it then. Also bread and butter pudding or use chocolate chip brioche instead. Just smother them with butter and marmalade and add a pint of milk with 2 beaten eggs into it and bake in a low oven until set.

    Damson mincemeat
    2,5kg damsons stoned, 1.5kg apples, 400g sultanas, 400g raisins, 400g currants 125g marmalade, juice of 5 oranges 1.5 tsp nutmeg, 1 tsp cloves 250g chopped walnuts (if liked). Put the whole lot in a deep baking tray and cook (covered) for about 45mins to 1 hour at 160 degrees centigrade. After that stir in a good glug of brandy, sloe gin/vodka, Cointreau and pot up into warm jars. Stores for about a year. Makes great puff pastry pinwheels instead of mincepies.

    1 pint blackberry juice made by rubbing fruit through a sieve
    1 lb sugar or 6 tablespoons honey
    8 cloves
    1 teaspoon cinnamon
    6-8 tablespoons brandy

    Put juice, sugar or honey and spices into a saucepan. Bring to the boil slowly, stirring until sugar or honey dissolved, then boil for 5 minutes. When cool stir in the brandy. When cold bottle.

    Dilutre as a hot drink, use with yoghurt, steamed pudding etc.

    Very good keeper because of the alcohol

    Hi sunnyman, been there seen it done it! If you can bear to do another re-boiling, add more sugar this time, which often does the trick. Otherwise, attack it a pot at a time by adding it to other jams and chutneys that you make - it's especially good added to something with very high pectin content like plums or damsons.

    Pour it over ice-cream.
    Pour it over sliced cooking apples to make the filling for a super crumble.
    Ditto apple & orange tart or pie.
    Warm it with a glug of cheap sherry to make a great sauce for meat.
    Mix a tablespoon of Tesco's mint sauce in with a jar of any runny jam/marmalade, put it in a dish on the dinner table, and call it 'special sauce'. Works for me!

    Marmalade 'sauce' is especially good with ginger or chocolate ice cream.

    I would reboil one last time adding a quarter of a pound of sugar per pound of oranges originally used, and if you don't mind losing a little clarity then one peeled, cored and chopped cooking apple per pound of oranges used at the same time.

    A tip that mum used to use was to add a couple or three cubes of rowntrees orange jelly when re-boiling and this helped with the set.
