A quick query for anyone thats been here before.
I have one jar out of 12 that failed to form a proper seal last night when I made chutney but I don't want to empty out all of them again and re-boil it to re-jar them.
I was wondering if it would work if I microwaved the single jar of chutney until both jar and contents were hot then put on a new lid?
Anyone have any experience of this?0 -
I`ve done this and it does work, just use it up first.
Having said that i think that there`s one or two in my cupboard that i did this to and they`re about 6 months old

I love this time of year, so many yummy things to make and do
I've made up 6 jars of Apple Sauce this morning and 2 lots of pear and ginger whiskey.
Been for a forage around the local copse and I have a nice handfull of elderberrys and few blackberrys. Any one have a nice recipe for Elderberry syrup/cordial? I've heard a little tot in hot water is fabulous for a winter cold.
Any help appreciated

How do you make the pear & ginger whiskey please? It sounds amazing! Sorry I can't help with the elderberry recipe. :beer:0 -
Pretty similer to any fruit in spirits really. Though with whiskey not so much goes with it, whereas most things go with vodka.
Cut up pears in slivers/cubes (makes no difference just up to personal pref), fill a jar about 2/3 full with pear chunks, sprinkle with a little sugar and a few small slivers of fresh ginger. Cover the lot with whiskey.
Every so often spin/shake the jar to make sure the sugar desolves and taste. Add more ginger or sugar to taste.
Its really nice on ice cream or pancakes. And the whiskey itself is lovely in a little lemonade ect.Happily married mama of 50 -
first time making things this year and have just had my first ever attempt at chutney! have managed 5 jars of beetroot chutney using the recipes from this site http://www.allotment.org.uk/ and seems to be fine but one question for the next batch i hope someone can help me with - do i boil all the liquid away? i did this time and its fine but am not sure i should have???? sorry if its a stupid question but would like to make for presents and want to get it right, o/h and D/S will eat it anyway if i have done it wrong.skintbint x

With chutny, you simmer it until when you drag a spoon across the bottom, it leaves a gap (like the parting of the Red Sea!).0

It was a recipe that needs 3 months to mature and I was worried that it would spoil before then. So I tipped the single jar of chutney into a milk pan and heated it until boiling then put it into a new, slightly smaller sterilised hot jar and it worked a treat. Seal formed nicely and now I can stick it in the cupboard in the dark to ripen0
