Ampersand - no fancy way of making! Top and tail gooseberries and simmer in the water till they have broken up and are tender. Hull and wash strawberries, drain well. Add to the pan and simmer a further 2/3 mins. Remove from heat, stir in the sugar and bring back to the boil. Continue boiling till setting point is reached. Well. 7 jars filled, but I'm not sure it has that lush fruit kick of the raspberry one. We'll see, when it cools. I need to cut the waxed paper circles for surfaces, before lids go on.
Vast carrot cake variation is in oven for demain - I always take something over. It's a popular thing with our customers. Made a mistake though - I thought one spice looked 'flat' in colour and suddenly saw I'd put in a tsp of cardoman, not cinnamon...never mind. I put that in as well. I'm glad this thread was bumped up, saved me searching for it!
I bought some greengages last week and made jam with them. Tried some today and it's delicious. I'm going to have to find somewhere local selling greengages (I bought them on a day trip) so I can make some more as I only had enough for 4 jars.0 -

Am sick to death of strawberry jam. Have picked something aproaching 20kg of strawberries so far and look to have much the same still to come. Am improvising away and have tried every combination of strawberry jam I can think of but my favourite (to date at any rate) is strawberry and rhubarb.
Bung 1kg of chopped rhubarb in a bowl with 1kg of sugar. COver and leave overnight.
Cook until soft then add 1kg of strawberries (whole if small, quartered if large), 900g sugar and 4 and a half 1/2 tablespoons lemon juice. Heat to the point of wrinkling (10 minutes at most). Only needs little wrinkles as it sets like a brick if you have big wrinkles.Saving for a Spinning Wheel and other random splurges : £183.500
