I have been looking at this thread for ages but never posted as I don't think that there is anything that I can add as you are all so knowledgable!
If anyone has the recipe for Rhubarb and Vanilla jam. I would be really gratefull.
We don't have an ASDA near us.

Have adapted the Rhubarb and Vanilla Jam recipe to make it considerably cheaper.
450g Rhubarb chopped v. small
450g sugar
1 tablespoon lemon juice
place in a plastic bowl, cover and leave overnight
add approx 300g apple (2-3 depending on size)
the same weight of sugar as apple
200mls water
1 tablespoon lemon juice
1 vanilla pod sliced length ways (scrape the seeds out and stir them in too) **found it more cost effective to buy these from E-bay than any of the supermarkets
Simmer until sugar has dissolved and then boil for 20-30 minutes and test for set. Beware it suddenly thickens up and starts to burn so don't wander too far!
Makes 3-4 jars
Tis most delicious..... and is equally nice when pear is used instead of the apple or a combination of apple and pear ... whatever happened to be lurking in the fruit bowl at the time.Saving for a Spinning Wheel and other random splurges : £183.500 -
I've just made some strawberry jam for the first time.It looks a bit runny just now.I'll have to wait and see I suppose.
I have often read that it's tricky to get strawberry jam to set-anyone have a foolproof method/recipe?

Tbh I thought it was a bit too much vanilla, it slightly overpowered the rhubarb, but it's still really nice.0 -
Finally braved Onion Marmalade having spent an eternity trying to find a recipe that didn't involve bacon, butter or redcurrant jelly in the vague hope of keeping the coast down whilst having a long enough shelf life to eat the stuff. Still worked out rather expensive to make with 2kg of onion reducing to a mere 4 jars. Now have to wait two months to find out what it tastes like despite the recipe helpfully ending with "season to taste" which is great when all you can taste is balsamic vinegar. Heres hoping it improves considerably with age.Saving for a Spinning Wheel and other random splurges : £183.500
