Lol, so you've got 3, 8oz jars to fill? I'd use 3/4 lb each of fruit and sugar as that will make 1 and a half lbs of jam. :)

Hi all, a quick question for you:

I've just bought a Huuuge bag of shallots to pickle. I have some tecso's value vinegar in the cupboard, is it ok to use for pickling? It says 'spirit vinegar with malt extract' on the label.

    Thanks,
    Lisa x
  • Christmas is coming and I have several home brewed wines 'on tap' on my utility room worktop; cherry (4 gall made using M & S cartons of cherry juice); apple (7 gall using apples from next doors apple trees) permission given; cranberry using cartons of juice; 7 galls elderberry picked from hedgerows. In the main I use 5 gall fermenters with taps to brew my home made wine and then when they are ready just use them 'on tap'. I have 4 sons and families as well as my parents staying over Christmas so the 'on draught' wine system works very well for us.

Just had a look at my 'Sarson's pickling vinegar' (not so money saving but we love the sarson's pickling vinegar)...

    ingrediants=
    Malt vinegar-from barley

I've just found this recipe on the internet

It just says vinegar, so maybe your vinegar will be ok?

    Roast Barley malt extract
    mixed spiced extracts

    It then says '6% acidity'

Thanks! ANother quick question....do I need to salt/brine my onions? I'm sure I never have before. I thought I just sterilised the jars, shoved the onions in with pickling spices then added the vinegar!
