    Hi Thriftlady

I have bought everything I need for the onion marmalade in the RC book. When you make it, do you slice your onions in the food processor or chop them by hand?

    Thanks :)
I haven't made that one yet lbt but I'd probably use the food processoor.

I think I may have confused people with my calendar :o sorry about that. When I listed the possible things you can make at particular times of the year they were suggestions rather than a list of everything I make. I do make a lot of different things but not all of them. I shall probably do more this year now I've got a calendar;)

I'll just go and edit my OP just to clarify.

    Hi TM

I am going to try this - it sounds lovely but I just wondered what sugar you use? Do I need to get a special one or is granulated okay?

Also, to make sure I have enough jars, how much does it make?

    Thanks :)

I've just made this and it made 6 small jars.

  • thanks for all the great suggestions. I turned that bucket of plums into a very basic plum chutney, but as I picked another bucket yesterday afternoon, I am going to try the one you suggested. It looks great.

With luck I will be picking blackberries this weekend, does anyone have any interesting ideas for preserving them?

Thanks again for all your help
    regards

Have you still got blackberries growing near you? I thought they'd be well over by now . Blackberry and apple jam would be good. Other than that I just freeze mine and chuck some into fruit pies.

  • Have ordered my River Cottage preserves book, had a look at it in town and thought it was excellent. Cheaper on line so I will have to wait for it to arrive.
Also got a second hand copy of Simone Seckers Quick and Easy Preserves as Thriftlady recommended paid £1.50....... think £76.95 quoted by a seller on Amazon is a bit ambitious (don't know if I am allowed to do a link but it is one of the 2 "new" books that pops up when you search for her book)

Doh! [smacks forehead with palm of hand :rotfl:]. I was in such a rush I didn't bother to read who wrote it! :o
  • I'd made it my New Year's resolution to try preserving stuff so thanks Thriftlady for this thread!:T
I've got my oranges and some jam jars from Lakeland so I 'm ready to make some marmalade this weekend. There are some tasty recipes being posted on here so I can't wait to get started!

I am so excited!!! I have just made onion marmalade - and it's really nice. This is the first time I have preserved anything so it has given me the confidence to carry on.

I have some oranges to make marmalade this weekend - think I might have to start on it tonight though.

Thanks to everyone for the inspiration :)
  • Can anyone advise me regarding pineapples? I bought 2 on offer in Mr T's. The first one, once prepared and cut up into little chunks was 870g of fruit. Hubby got me a Tefal jam maker from Lakeland for Christmas and I've been putting it to good use so far :D

The idea is: chuck in prepared fruit, add same weight of granulated sugar (or jam sugar if low pectin fruit is used), along with about 200ml of water... Well, it came out AWFUL!!! Hard as a rock, and a dark brown/orange colour. Well, it gave my hubby a good laugh anyhow.

I have made nice strawberry & plum jams, plus marmalade in it successfully - is pineapple just a difficult jam to make?
