    Has anyone made damson jelly using Pam Corbin's Preserve book? Her recipe says add 600 ml of water for every kilo of fruit you use. I measured 1.8 litres as I was using 3 kilos of fruit but I couldn't fit it all in my jelly kettle. I've had a look around the internet at other recipes and they all say to only cover half the fruit with water. My fruit looks swamped.

    Does it sound like too much water? I can get more fruit if it sounds wrong.

    Hi everyone...what a great thread....not had time to read it all yet but wondered if any of you could point me in the direction of a simple Red onion chutney recipe...just dug up my red onions and was very surprised to see how well they had done...1st time I have grown these but will be planting again next year...hope you can help...Thank you xx
    Feeding 6 Adults 1 Teen a 8 year old with hollow legs and a very fussy 5 year old. Also 3 cats and 3 fishies
    To include all Food,Toiletries and Petfood.

    I've only just seen your post, so it's probably too late, but there is no damson jelly recipe in the book (if you'r talking about the river cottage preserves book) so I'm confused.

    Do you mean the hedgerow jelly recipe? That one uses 2 kilo's of fruit, half of which is apples or crab apples which is probably why she uses that amount of water as there's not much juice in them. If you're using damsons alone, you probably wouldn't need as much water as they have more juice in them.

    Does anyone have a reliable recipe for green tomato chutney - I think I am going to be left with masses of green tomatoes this year.

    You can use green toms for Hugh FW's Glutney chutney and its still my favourite out of the many different ones I've tried

    Any ideas why my plum jam hasn't set please?
    Made all sorts of jam since I discovered how simple it is and this is the first time I've had one not set :(

    Too much water, not enough sugar..... pop it back in and boil it up again :) be sure to test it on a cold plate to see if it has reached setting point :) Plums are usually high in pectin but if yours aren't they may need a squirt of lemon juice
