ALDI Shopper's Meal Ideas

Hi, I have shopped weekly at ALDI for a few years now but more and more I am spending an additional £15-£25 elsewhere, as although ALDI offer good quality foods, they never seam to change. As a result, my kids get a bit fed up of eating the same old meals (hence the extra spend).

Are there any ALDI shoppers out their who want to share their meal ideas?

I know ALDI have Phil Vickery's recipes online:

But does anyone else have any ideas? Especially for cheap, quick and easy family meals.

Since I started the thread i'll go first with my chicken noodle stir-fry recipe:


Half pack of Aldi Oakhurst frozen sliced chicken breast (around £2 a bag)- defrosted and and dry fried in a non-stick frying pan until golden brown. (I find that not using oil at this stage gives the chicken a nicer texture).

Then I add around 1 tablespoon of cooking oil. Followed by...

One onion sliced into large chunks

One to two courgettes sliced lengthways

2 Carrots cut in half and sliced lengthways - thinly

Half a sliced green/red and yellow pepper

Sprinkle of salt and pepper (and sometimes a little curry powder)...

Then I boil 3 packs of ALDI thai noodles (around 20p a pack).

When cooked I mix the noodles in with the chicken and vegetables and serve. The whole lot takes around 15 minutes to cook and feeds 2 adults and 2 children.

And the next day i'll use the rest of the peppers, courgettes, onion, chicken to add to a curry.

I'd be grateful for any ideas....:j even if it's just a topping for a baked potato!!! :T

    Good idea - I didn't find Phil Vickery's recipes that inspiring so far :o

    I use that same chicken defrosted and chopped smaller to add to cooked pasta with a tin of condensed chicken soup and grated cheese on top and then baked.

    Also, their gammon steaks are nice with chips and veg.

    The smoked ham is nice chopped and in an fritata/omelette with other veg added.

    Or the tiny squares of chopped bacon cooked in with scrambled eggs and put in pita breads for weekend lunch.

    Chicken breasts, with a slit cut in them, teaspoon of aldi red pesto stuffed into the slit, then wrap in a bacon slice and bake - nice with roasted sweet potato and roasted veg.

    We use the tiny squares of chopped bacon in a Pasta carbonara type dish.

    Fry cubed bacon. fry onions and/or mushrooms. Mine like a lot of onion.
    Then I cook the pasta. stirr in a couple of big tsps of their tomato pesto (optional) . Beat together 2 eggs and a slosh of milk and some grated parmesan (other cheese would do) Put all ingredients in the pan with pasta and stir off the heat. Residual heat will 'cook' the egg, hopefully without scrambling. If it does this, it doesn't taste any different, just looks a bit funny. Need lots of black pepper ground in to this as well in our house. fresh basil if you were being extravagant or posh. In fact it works fine without the pesto. This is only a recent experiment.
