Traditionally lager was started in the autumn and fermented very slowly through the cold Bavarian style winter to give a refreshing drink for the following summer.
Once upon a time, I got a summer job working for Molsons in Toronto, if I remember correctly, their lager got a whole week of conditioning at refrigerated temperatures:rolleyes:.0 -

1 cup of whisky
1 tin of condensed milk
1 carton single cream (long life)
1 teaspoon of instant coffee (or more, to taste)
1 teaspoon of runny honey (or more, to taste)

Thanks to SMeeMaw for posting this on page 2, but this concotion tasted nothing like Baileys - more like a load of whisky with evaporated milk
I was only able to save the mixture by adding powdered Irish creamer, Kahlua, almond flavouring, more honey and sugar. I didn't want anyone else to try this recipe without having enough other ingredients to rectify this.
Also, I don't want this to sound harsh for SMeeMaw, the idea of making homemade Bailey's is a lucrative one, and we only find things out by trial and error so thank you for giving me the impetus to make some! :beer:0 -

Here's another variation, with what I think are the crucial ingredients:
300ml sweetened condensed milk
300ml Irish Whiskey
250ml single cream
3 eggs
15ml chocolate syrup (as used in making cakes)
2 - 5ml coconut extract (Creamed coconut like Sharwoods)
Blend until smooth, keep in the fridge and drink within four days.....0 -
This is not quite in the spirit of this forum (more like what to buy in Aldi, Lidl etc) but Lidl's own Baileys is good. It's called Queen Margot something and its normally about £5.50 and currently on at £4.50. I'd recommend stocking up on that rather than fiddling about with lots of ingredients (unless you have them in already, I guess).0

There are a few others I've seen as well, similar style bottles to baileys, with Irish names, however can I remember any of them? Nope! It's like "flannigans Irish creme whiskey" or stuff like that, always around that £5 ish mark, and about 85% similar to baileys...
(My wife had a thing for baileys for a while and for the 2nd glass onwards you can't really tell - or care!)

hi. i'm hoping to start making my own beers and wines. I don't really want to buy a kit as the reason i'm wanting to do this is to make recipes that cant be purchased in supermarkets. I'm thinking the main bits of kit i need are A couple of demijohns, an airlock, siphoning tubes, and possibly a large food grade container. Does anyone know a reputable online store that sells these or a way to put this kit together inexpensively? I can't buy demijohns from car boot sales as i don't drive and i have no homebrew shops nearby.

If you don't want to get a kit then the very first and most important thing you need is a book on the subject. I'd sugget you read that 3 or 4 times then decide what to buy.
The link I posted earlier is the best place I've found.
