Lemon/cranberry curd as an Xmas present??

Just a quick question - I was intending to make a few jars of cranberry or lemon curd as a Christmas present for a few people but I've just read the recipe and it said that it should be kept in the fridge. THis is a problem as I was intending to make the curd here in England a bit before christmas and then bring it back to Ireland to distribute it to relatives.

So does it really need to be kept in the fridge ? Or can I make it in advance, leave it in the cupboard and treat it really like a jam??

    most lemon curd recipes call for fresh eggs and butter, so I'm afraid they don't keep very long. The most I have kept curd for is 3 weeks, in the fridge but it didn't go in the fridge until about 24 hours after I'd made it, so I'm sure it would be OK out of the fridge for 24 hours or so.

    I don't know your timetable but it only takes a little time to make so maybe you could make it the day before you travel and advise the recipients that it needs to be in the fridge and to be used up within two weeks?

    Other than that, maybe find a recipe for lemon cheese, which will keep longer?
