There are two kinds of sweetbreads: stomach sweetbreads (also known as heart or belly sweetbreads), which are an animal's pancreas, and neck (AKA throat or gullet) sweetbreads, an animal's thymus gland.

NB Nothing to do with testicles at all!

Erm.......this thread has rasied a few questions. I hope you don't mind, but......

    1) Why would Quackers be looking at Aliasojo's childrens feet?

    2) If Quackers is getting the eyes, please can my springer spaniel have the ears?

    3) Is it my imagination or did Pal ask a sensible querstion & if so, what on earth came over him?

    4) If Jay-Jay is a witchety woman, how can she have testicals?

    5) Didn't Hanniabl Lectuer (Sp?) like sweetmeats?

    6) What was the alternative title to Sarahsavers Duck thread?

    7) Is Jay-Jays avator supposed to be the dancing baby from Ally McBeal or have I missed something in pop-culture? (I know this is not exclusive to this thread but I've been curious for eons & now seems like the ideal time to ask).

I would be very grateful for any answers as I know I'm going to be wondering about this at 3 o'clock tomorrow morning.

    Thank you.

    4) If Jay-Jay is a witchety woman, how can she have testicals?

I'm a laydee... I do not have testiclay!

    5) Didn't Hanniabl Lectuer (Sp?) like sweetmeats?

Didn't he eat his friends brain?

    6) What was the alternative title to Sarahsavers Duck thread?

It's a kung fu baby chosen because I had a youngish baby and not much imagination when I joined :D. Now I should change it to a dancing bottle of wine... which would represent me more precisely :D

Those of you who are squeamish, if you eat sausages you eat pigs' heads anyway.
I just wanted a recipe! I know it seems that silly season has arrived on old style. Like what SHOULD i have called the duck thread? but if i posted anything daft it would get wiped out or moved as quick as a flash

My grandmother used to cook pigs head for my grandfather and she used to cook brawn as well.

I found this in an old (1935) cookbook, the first edition was 1927.

    Brawn

    Ingredients:

    Half a pigs head
    1lb pork
    Bunch of herbs
    Blade of mace
    1 Teaspoon peppercorns

    Brine

Remove the brains, eyes and bristles from the head and wash well in salt water . To make a brine boil together 4 pints of soft water, 1 and a half llbs of bay salt, 1/4lb brown sugar, small 1/2oz saltpetre.

When the brine is quite cold put in the head and pork and leave for a week. Wash, place in cold water and leave for a week. Wash, place in cold water with the herbs etc and bring to the boil. Simmer gently for 21/2 - 3 hours. hours Cut the meat into small pieces and then continue stewing the bones until the stock has reduced itself to half the quantity. Put the meat into moulds, pour over the stock and leave to set.

I have to say I have tried it, albeit and didn't like it!

Although apparantly in Italy the same word is used for sweetbreads and testicles, so that might be where the common misconception started - although its more likely to be that people are getting confused between sweetmeat and sweetbreads...
