Quite a mixed day at weezl towers yesterday...

I made a lemon drizzle cake, but ruined it by adding far too much bicarb. DH tried it, but nearly gagged, and DB who was staying said he'd just as well have squirted his mouth with washing up liquid.

Dear reader, I hasten to add that I did not ask either of them to eat it, they just saw it on the side, hacked off a man-sized portion, and went for it.... :)

    Bad times...

But I replicated the pasta frugalista recipe, substituting garlic stuffed olives for the anchovy stuffed ones, so it's now a success as a vegetarian option and I managed to make 7 portions for the freezer.

    Good times :T:T:T:T

Hope everyone else is feeling frugalicious?

    xxx

  • Made a nice soup yesterday with 49p Aldi butternut squash. Should have been enough for freezer, but everyone had two helpings.

Lightly fry onion, garlic and one courgette. When going soft transfer to pan with cut up chunks of butternut squash, Two carrots and cover with stock and i added 3 bay leaves.
Simmer until mushy and then i used a potato masher to mush it all up further..( couldn't wait and it works as well as a blender) Serve with seasoning and toast..Made 8 portions two huge bowls each.

    Cost

    BNS- 49p
onion ( from large bag of reduced) 3p
    1 courgette ( from 49p bag of three) 16p(ish)
    stock-2p
    2 carrots-5p
    bay leaves ( free)

    cost=75p

So made 8 portions @ 9.3p each, but i suppose if you factored in gas/ electric would be about 10p each. Very filling and moreish. If anyone grew their own it would be cheaper too.

I also like the same recipe with red peppers but it does work out more per person/ portion.

Sorry about your drizzle cake Weezl.

Morning all! Thanks for the suggestions, I'm going to do a search for egg custard tart. I don't have any raisins, but it's big bit of pastry so I'll keep Ceridwen's suggestion in mind.

Sorry to hear about the cake Weezl. I've decided I'm not really the baking type. I've been told many a time that you have to follow the recipe to get good results, but I like adding a bit more of this, and a bit less of that... So it's no surprise my cakes never come out right! LOL

I've got some kidney beans cooking to make chilli con carne. I'm going to see my gran later and will eat there, but I thought it I'd make the chilli anyway as it always tastes nicer the next next day.

I'm going to make some carrot and ginger soup for lunch. I've got some no knead bread rising and it should be ready in time for lunch.
Getting there... A deal at a time. :T

OK, looking at the recipes, I don't have any cream and not enough egg yolks for egg custard, maybe I'll just make them with the one egg I have and see how it turns out.

See I can't help changing recipes, it's second nature to me. :rotfl:

You know I am sure that isn't true, I make a foolproof cake recipe which is
225g each of sugar, SR flour and fat and 3 eggs all in a bowl, mix with a hand mixer until smooth and chuck into 2 8inch-ish cake tins.
Cook at 180 degrees until it is cooked...

I tweak it from this point, e.g. adding apple slices and cinnamon and sprinkling with sugar, taking out a tablespoon of flour and using cocoa instead, making little buns with chocolate chips in, grating courgette into it and stirring through, adding grated beetroot, putting coloured sprinkles in so it makes a rainbow when you cut it, using different types of sugar...

I think once you have a basic recipe that works you can tweak to your heart's content! Keep going, I believe in you! :D

    Hello all!

Have been reading but not posting as I'm not as good at the meals for pennies as some of you are :o I did make a lovely vegetable soup on Monday for tea though. I used half a bag of frozen mixed veg, an onion, half a head of celery (leaves and everything), 5 carrots, a tin of tomatoes, salt & pepper and some stock. I cooked it until it was done then blitzed it. It was well received by the children and DH and was very tasty & filling served with naan breads that I found in the freezer :D There was enough left for lunch for my friend and I yesterday and DH & I today so 10 servings :T

I have been busy baking Twinks homemade hobnobs with cranberries and a weetabix cake with cinnamon & dried apricots. Home Bargains have good prices on both dried fruit at the moment hence all the baking! DS1 and his friend have just rang to say they're on their way for a drink of juice and some Twinks so that'll put a serious dent in the tin ;)

Hope that everyone is well. Did the birds appreciate your lemon drizzle cake Weezl?

    Hiya,

Please post even if it's a bit more expensive to make the meal, I need the inspiration, and everyone else does too! :) This thread is really not meant to feel competitive, just a bunch of friends being as frugal as we can, within our own parameters. So please be part of the gang! :D

I've not fed the birds yet sunnygirl, I'm still conviced deep down I can salvage it! Reckon lemon juice and sugar and then the base of some sort of lemony trifle... That's me all over though, I'm a stubborn madam when I've set myself a challenge :)

BOB, great soup recipe and good tip about the BNS, I'll see if I can get to aldi soon. Would be lovely to see you at some point if you do venture to south wales and fancy meeting us...;)

Sian, thanks for fool proof cake recipe, will try it.... Erm ISOM have you got any 8 inch tins I can borrow?

Guapa, you haven't popped back with an update, I'm a bit worried in case the tarts aren't good!?

Shaz are you drained after your weekend visitors and exam, quite an intense week really...:D

Weezl you are so friendly and welcoming, is cheers my soul :)

I also don't always use that size tin. I have made apple and cinnamon cake in a lasagne type dish and a heavier cake with dark sugar and chopped figs (mmmmm) in 2 loaf tins. I'm not one for following convention, most of the time they turn out fine and there are always hungry housemates to feed with experimental cakes! :D
