    For the second rising, I always use a loose piece of clingfilm, it doesn't stick and it doesn't stop it rising. Sometimes I oil it, sometimes I don't :) Doesn't really seem to matter.

    if that's why you want bigger pans, give this* a try first, & if it works for you it it'll save you some cash :)

    *don't cover the dough at all & give it the occasional spray with water to keep it moist

    I never cover mine during the second rise & it always turns out beautifully :o

    Thank you for that. I put my bread to rise in the grill above my oven, and set the oven on its lowest which provides gentle warmth in the grill area. I've tried my bread without covering, but it always formed a skin which prevented further rise. I shall try the cling, and the spray. Thank you both :T

    Blimey! I use 1.5 lbs flour when I bake and that fits nicely in a single 2lb tin. I don't use a damp tea towel though, just oiled cling film settled loosely on top of the tin.

    I had that problem but leaving the loaves to rise for longer usually does the trick!

    What is the cost of your loaves?

    I get 2 x 2lb loaf tin loaves for a round 80p. That includes the salt/sugar/butter and gas for cooking.

    I buy the Asda brand strong flour £0.48p for 1.5kg and their fast acting yeast 6 sachets = 42g at £0.50p.

    It makes lovely light bread.
