Thought I'd share this with you!
I made Sweet potatoe fritter type things last night and was AMAZED that 1 sweet potatoe when grated whent soooo far....
I would normally have done wedges but was feeling adventurous.
When doing wedges I would have happily peeled 3 or 4 sweet potatoes and cut them up into wedges, but discovered when grated 1 went much further and made plenty for 2 people!
So just thought I'd share my findings with you all, think you could use all sorts of grated vegetables with the same effect.
Hope someone finds this usefull..

They were very much like rosties - but I made mine quite small so they cooked quickly
I added an egg white and a bit of flour, and some chilli flakes and garlic as I like things well seasoned!0
