If a mortgage says you can overpay by, say, 10% each year without penalty, is this 10% of the original balance, or 10% of the current balance?

What happens if I pay too much before payment date?
I have a mortgage with mortgage express and its on interest only. My payment date is the 15th of the month. What would happen if say I pay my Jan payment on 15th of the month, then on Feb 14th pay the next payment? I am not sure where the payment from the feb 14th would go? Any ideas? Many thanks
