Afternoon all,
In my garden, I have a half whisky barrel, that I planted up with some herbs, theres mint, sage, oregano, rosemary, parsley and thyme.
They have grown really well but to date all I have done is used a sprig of rosemary on some lamb and roast potatoes, mint in new potatoes, a bit of sage in some stuffing and a few different leaves in salad.
I know I can freeze herbs and I will do but I was wondering if anyone had any uses or recipes that they could share please?

I chuck them in everything
You can cut a good handful and shove them in a chicken when you roast it
Make your own butter for garlic bread
Add them to breadcrumbs for coating chicken/fish
Add them to olive oil and balsamic for salad dressing

i love growing herbs but often wish i could use more...do u have chives ? they are nice in anything with onions and lovely chopped over scrambled egg and snipped into quiche
rosemary is nice in nigellas coated nut recipe and pinned to lamb steaks and cooked in a gridle or over the bbq..nice poked into lamb joint and over pots roasted
i adore thyme its my favourite i used it in herb butters to put on steak and chicken
mint is lovely in a cup of hot water and putting a sprig in boiling pots
bay is good in with cooking cauliflower to stop the cooking smell
i chop up herbs on pizza and use parsley in fish pie...perhaps go to libary and get a book on herbs or do a bit of googlingonwards and upwards0 -

Thanks to all, some good ideas. Just what I needed.
Everytime I see them I think to myself i must use of them. With these ideas I can start googling some recipes, love the sound of herb infused oils.
I am going to make some stuffing tomorrow, so some can go in there.
I may even do a little use a herb a day challenge.0 -
Herbs I'm growing this year.
Sage, parsley, thyme, rosemary, chives, basil, oregano, sorrel, mint, dill and fennel.
I bought a wooden herb planter specially for them.
Only tend to use mint on spuds, parsley for home made parsley sauce which is excellent and fennel on fish.0 -
I too stuff a good handful in roast chicken with half a lemon, yum! Mint, parsley and thyme is nice chopped and put in couscous with roasted veg or in potato or couscous salad. To be honest I put fresh herbs in most dishes! It's a good way of finding out what works for you. I particularly like bay leaves and thyme so they get used the most!2019, move forward with positivity! I am the opposite of Eyeore :rotfl:0

I grow parsley, basil and coriander on the window sill. Basil good for all Italian dishes/sauces. Coriander good added to all Indian dishes or carrot and coriander soup. Parsley nice added to salad or I use it for mushroom stroganoff: http://www.bbcgoodfood.com/recipes/1898646/mushroom-stroganoff0

Today I made some nut burgers, using some Lidl mixed nuts, fresh breadcrumbs, cream cheese, egg, onion and a handful of sage leaves and some thyme. Really nice.
Yesterday i made a mushroom quiche and again put some parsley and thyme in. (didnt make the stuffing)
Will keep going with my use some each day.
