How best to dry fruits

I was watching rick stein and dident realise prunes were dried plums.
Think I found few plum trees locally.
yellow ones and mate has plums in garden i can have.
he also said dried apricots which often see reduced destion.
Wondering what fruits can you dry and how best to do it , i think its oven.
Just like idea of preserving my finds for winter for lunchboxes ect.
maybe even a lovley xmas food gift.
